Menu Plan Monday

Hello friends! I hope 2018 has begun well for you. I keep thinking that it seems like Christmas was a long time ago already. Since then, we’ve been in an arctic freeze. I’m not sure we’ve reached freezing in the past 2 weeks. It looks like that streak will break a bit this week. I’m hoping that with this, the coldest part of winter will be behind us. Daughter #1 headed back to college over the weekend; it was great having her home. She also took along the two big rabbits she was pet-sitting for an international student. We miss them too. Daughter #2 begins college again today, and Daughter #3 goes to school again Tuesday.

Here’s the menu plan for the week:

Monday: Taco Tater Tot Casserole

Tuesday: fish, probably with “home made” green beans (as opposed to canned or frozen)

I’m excited to say that I won’t be cooking the rest of the week! I’ll be somewhere (I’ll tell you where later). But, it should be green and much warmer. Hmmmm …

Daughter #2 will be cooking — as you can see, she’s a bit more ambitious than I am. I am sorry to miss all this —

Wednesday: Stuffed Potatoes, Red Kidney Beans, and Heavenly Oreo Dessert

Thursday: Italian Wedding Soup, Mashed PotatoesApple Cobbler, and Breadsticks

Friday: Potato CakesChocolate Chip Skillet Cookie, and Chicken Taco Soup (recipe from my mom):

 2 t. olive oil
1 sm. onion, finely chopped
1 pepper finely chopped
1 15 ounce can black beans
 (I soaked overnight and cooked for 2 hrs. about 1 1/2 c. dry black beans.  It made a lot but I used all of them)
1 can sweet corn, drained
1 can stewed tomatoes (I used 2 pints I had canned and put them in my food processor)
1 8 oz. can tomato sauce (I used 2 cans)
2 c. shredded chicken
1 T. taco seasoning (I used 2 T out of a taco seasoning packet)
2 c. chicken broth ( I used more )
salt  &  pepper
 Heat the oil.  Add onion and pepper, season with salt & pepper.  Cook 5 minutes. Add the beans, tomatoes, corn, tomato sauce, chicken and taco seasoning. Stir to combine.  Add chicken broth and simmer.  Cook for 15 minutes.

  5. It’s been very cold here, too – teens and 20s during the day, single digits and low teens at night. We usually have occasional days and nights like that, not a whole week of them at once. You know it’s been cold when you look forward to 20s as “warming up!” But it’s supposed to be in the 40s and 50s, one day even in the 60s this week! Yay! Looks like you’re headed for a nice climate. I pinned the skillet cookie recipe – I have a small skillet like that that came with a chocolate chip cookie mix, but I haven’t know what proportions to use to make one from scratch – and now I have a reference!
