Welcome to the final menu plan Monday of the year! I know, there’s one more, but believe it or not, next Monday is Christmas, and I doubt I’ll be posting then. This weekend was the annual Christmas lunch of the bonsai club that daughter #3 and I attend. It is always fun. Everyone brings in plant-related (and some non-plant) items for giveaways. Can you believe that of the 39 people there, my number was chosen last to pick? Bummer! The buffet is good and has some really unique foods. A man near us was trying octopus! It looked really creepy, although he said it didn’t taste too bad.
Daughter #1 is home from college, and she and Daughter #2 have both finished finals. Daughter #3 completes hers this week, and piano lessons end for the year on Thursday too. Yay!
Wouldn’t you think meals would finish too? But no, people do tend to continue eating. So, here is what the week holds —
Menu Plan Monday
Monday: Tortilla Soup — I am still a bit sick (although thankfully not as sick as the lady who was supposed to play Sunday at my organ church. She was really sick, and the music chairman texted me at 7 a.m. to see if I could fill in). A few of the girls are stuffed up too. Soup always seems good for that —
16 oz. can refried beans
14.5 oz. chicken broth
5 oz. chunk chicken (I usually just cook 1 chicken breast)
15.5 oz. black beans, rinsed
3/4 cup salsa
Combine all ingredients. Bring to a boil, then reduce heat and simmer 10 min.
Crumble a few tortilla chips in the bottom of each bowl.
Ladle soup over chips and sprinkle with cheddar cheese.
Tuesday: Cheeseburger Pie — one of the kids’ favorites when they were little.
Wednesday: Loaded Chicken and Potatoes — from an Amish column in the newspaper that I enjoy each week.
Thursday: Cincinnati Chili (the big Duggar family’s recipe — obviously I’m making less)
Friday: make your own pizza 🙂
