Welcome to the final menu plan Monday of the year! I know, there’s one more, but believe it or not, next Monday is Christmas, and I doubt I’ll be posting then. This weekend was the annual Christmas lunch of the bonsai club that daughter #3 and I attend. It is always fun. Everyone brings in plant-related (and some non-plant) items for giveaways. Can you believe that of the 39 people there, my number was chosen last to pick? Bummer! The buffet is good and has some really unique foods. A man near us was trying octopus! It looked really creepy, although he said it didn’t taste too bad.

Daughter #1 is home from college, and she and Daughter #2 have both finished finals. Daughter #3 completes hers this week, and piano lessons end for the year on Thursday too. Yay!

Wouldn’t you think meals would finish too? But no, people do tend to continue eating. So, here is what the week holds —

Menu Plan Monday

Monday: Tortilla Soup — I am still a bit sick (although thankfully not as sick as the lady who was supposed to play Sunday at my organ church. She was really sick, and the music chairman texted me at 7 a.m. to see if I could fill in). A few of the girls are stuffed up too. Soup always seems good for that —

16 oz. can refried beans

14.5 oz. chicken broth

5 oz. chunk chicken (I usually just cook 1 chicken breast)

15.5 oz. black beans, rinsed

3/4 cup salsa

Combine all ingredients. Bring to a boil, then reduce heat and simmer 10 min.

Crumble a few tortilla chips in the bottom of each bowl.

Ladle soup over chips and sprinkle with cheddar cheese.

Tuesday: Cheeseburger Pie — one of the kids’ favorites when they were little.

Wednesday: Loaded Chicken and Potatoes — from an Amish column in the newspaper that I enjoy each week.

Thursday: Cincinnati Chili (the big Duggar family’s recipe — obviously I’m making less)

Friday: make your own pizza 🙂

  1. This is a real live person living in Florida and enjoying our perfect weather! As far as cooking goes for this week, it will be a short week. I’ll only need to fix two dinners so will pull easy things out of the freezer and yes, your guess is as good as mine! I’m trying so hard to tie up all the loose ends to be ready for Christmas. I hope you and your family will have a Blessed Christmas. Thanks for all the wonderful (and educational) blogs during 2017.

  3. At least you have a good start on evening meal plans for this week! I am in the process of cleaning out both freezers (little one in garage and smaller yet one at the top part of my refrigerator) in order to make room for 4 things that I purchased at GFS this afternoon. I managed to cram everything in but a microwave chicken and fried rice single meal that was outdated, but I went ahead and heated it up anyway. Much to my surprise there was nothing wrong with it, and it actually tasted pretty good. My Christmas cards are done, gifts all wrapped, and food bought for Dec. 23 Family Christmas at my house, so this should be a fairly relaxing week for me. Lunch out with you and another teacher friend promises to be the highlight of the week on Wednesday.

  4. I am thinking of holiday foods to prepare. Our store had great buys on hams and pork loins this weekend. At school today our principal provided staff with a Candy Bar. There was a stack of festive bags and we each could take a bag and put any treats we desired off the Candy Bar. It was pretty amazing!

  5. I’ve often thought that all the extra Christmas responsibilities wouldn’t be so bad if we could stop everything else while we did them. 🙂 Hope you’re feeling back to 100% soon. I don’t know if I could ever try octopus.

  6. I am just getting around to reading Monday’s blog — and it’s Thursday! The Bonsai Club sounds like a fun group. Maybe next time you’ll draw #1! Merry Christmas!
