Happy Christmasy menu plan Monday to you all! This last week involved trying to get over some type of virus which went into bronchitis for me. I had bronchitis once, 21 years ago, and I haven’t forgotten it. Thankfully this is a lighter case. I was also busy preparing for my annual Christmas piano recital and party.

As usual, it was a really fun morning of music, games, and food. I prepared the food mostly on Friday. Thanks to my girls for help with food prep and photography!

The little chocolate reindeer and sleigh were from Trader Joe’s. Cute! Another thing I’ve done recently and liked is this grapes-and-cheese Christmas tree. It looks neat, and is really easy to put together (these are two things I look for in food items!):

For the first time, I wore my Nutcracker leggings from Redbubble (affiliate link). I liked them! Redbubble does have tons of REALLY unique leggings (and other items); I recommend them for that quirky person on your gifting list.

In other, sadder, news, our pet rabbit Fred died Saturday. He has been the sweetest rabbit! We had him since 2009 since my oldest daughter got him at the fair from a 4-Her. He was not deemed good enough to be a show rabbit due to a defect in his coat (he always looked fine to me, but we’ve never ventured into the world of rabbit showing). He had the best personality, and we will miss him. Each morning when I come down to the kitchen, it feels strange now not to greet him.

Menu Plan

Here’s the week’s menu plan so far:

Monday: Chicken Parmesan — Daughter #3’s request (photo at the top)

1 jar marinara sauce

4 chicken breast halves

2/3 c. shredded mozzarella

1/4 c. bread crumbs

2 T. olive oil

noodles

Pour marinara sauce in bottom of ungreased 12 x 8 dish.

Place chicken over sauce.

In small bowl, mix cheeses, bread crumbs and oil. Sprinkle evenly over chicken.

Bake at 350 30-35 min.

Serve over noodles.

Also green beans, which I bought at the store this week.

 

Tuesday: Make Your Own Pizza — I make the crust, everyone makes their own individual pizzas with toppings of choice. My choice lately? Pesto sauce with onions and garlic 🙂

Wednesday: Southwestern Three Bean Barley Soup — my husband is always wanting beans. Here’s a new bean recipe I found.

Thursday: Sweet and Sour Chicken — I admit, it’s Chicken Helper I’m using 🙂

Friday: Football Fiesta Casserole Daughter #1’s favorite; hopefully she’ll be home from college by now.

  1. Your recital looks delightful. I love seeing your refreshments. The food tree is novel. Sorry you are not feeling up to par. Are you better now?
    Saturday I went to a friend’s home for lunch and she and others baked cookies together for a cookie swap. It’s a fun time of the year.

  2. What a great-looking group of young musicians! I’m going to check out Redbubble – the leggings you got from them are super cute! Hope you are feeling better and can enjoy everything that’s coming up. Love the cheese and grape Christmas tree. I usually bring relishes to our daughter’s house on Christmas, so that might be my dish this year. So sorry about your pet. Glad you have the memories.

  3. Hope you’re feeling better! There’s no good time to be sick, but it’s especially hard this time of year and when you have events scheduled. Love the snack tree idea – simple and nice-looking are my faves, too.

  4. I’m so sorry about Fred. I know your girls will really miss him.

    Your table of Christmas goodies looks so enticing. I especially like your Christmas tree. I hope I remember that the next time I’m asked to take hor d’oeuvres to something. Did you use celery for the stalk of the tree? Your recipe for bean soup also looks good.

    I pray you’re feeling better by now. Be careful.

  5. Hope you are fully recovered. This is no time of year to be “under the weather.” All the treats for your recital look delicious. It made me hungry just seeing the pictures! Your house is so nicely decorated, I wish there was a picture of your Christmas tree. This week is just flying by for me. I made a fancy tuna salad for supper on Monday. Tonight I tried a new recipe called Oven Barbecued Swiss Steak. It was not a winner so I won’t be keeping the recipe. It wasn’t terrible but not great either. There’s enough for leftovers for Thursday. Wednesday afternoon I have a short dental and a doctor appointment so we’ll grab a bite at a nearby restaurant. Well, that’s most of the week anyway. I liked the close-up picture of Fred. What a pretty rabbit! I know how much you and the girls will miss him. Sorry about your loss.
