Menu Plan Monday 11/12/17

Homestead band BOA 2017

Happy Menu Plan Monday to all you friends out in internet land. This week, marching band season ended for another year. Up above you see daughter #3’s band going onto the field at BOA grand nationals. They ended up 13th out of the 100 bands there. Wouldn’t you know, only the top 12 got to go on to finals. Oh well — motivation for next season!

Daughter #3 was also inducted into National Honor Society this week. Busy week for her, and a reminder to me of many of my own good times from high school.

This week, our weather continues to be cold. So a menu plan that includes soup and other hot “cozy” foods sounds good. Here’s what I am thinking —

Menu Plan

Monday: leftover buffet — emptying out the fridge —

Tuesday: Sweet and Sour Chicken — I recently got a great deal on Campbell’s StoveTop Sauces, and bought this one. Looks like a quick and easy dinner. I’ll make rice too.

Wednesday: — White Bean Chili — Lately I’ve been buying Bush’s White Chili Beans on sale. Then I use the recipe on the label to make an easy white bean chicken chili. It tastes good and couldn’t be easier.

Thursday: fish. I bought a bag of tilapia fillets last week. I put them on a baking sheet and chop up vegetables on the same pan; season it all and bake.

Friday: Chicken Pot Pie (one of my favorites)

  1. I am pleased to hear of her being inducted in the National Honor Society. I am very grateful to have six wholesome granddaughters! In this day and age, don’t take things like that for granted!!! I had a wonderful Thanksgiving Dinner at the Dudleytown Lutheran Church yesterday. It is their annual dinner. I had trouble finding a parking spot. People flock to it! Those Lutheran women can REALLY cook!

  2. Stopping by from the MPM link up. Chicken Pot Pie sounds amazing right now. 13th place out of 100 is a big deal. Next year they will have it for sure! And NHR too! Awesome!

  3. This cold weather is definitely putting me in the soup mood! I am making both potato soup and vegetable soup later on this week. With no planned luncheons out after today, I hope to stay home and get many tasks done around here before Thanksgiving and Christmas festivities start up next week. Send my Congrats to Sophie on Band wins and the National Honor Society! I remember how special it was when my own children were inducted to it at Huntington North High School, where my daughter still teaches Math.

  4. I realize I’m a little late to be talking about menu planning for the week since it’s about half over! Just been crazy busy here. I don’t know how I ever found time to work a full-time job. I want to say congratulations to your daughter on her band’s ranking. And for the National Honor Society recognition. You must be so very proud to have such amazing daughters!! Also amazing parenting!!

  5. I emptied our fridge on Monday, too — but it all went in the trash. I keep forgetting to check the tubs of leftovers. Congratulations to the Homestead Band!
