First, let me apologize for Menu Plan Monday posting on Wednesday this week. Other obligations needed to happen on Monday and Tuesday, but I thought you still might enjoy hearing about last week, and seeing this week’s recipes. Plus, I always enjoy reading about what’s going on with each of you in the comments.
So. Last weekend saw the school’s first high school football game of the season, and, more importantly to me, daughter #3’s band’s first performance. It’s always fun to see the band in uniform. Over the coming weeks, they will add more props and movement to the show. It really is neat to see it all come together.
This week, daughter #2 starts college. It’s a different type thing from daughter #1, who moved away to live at school. This daughter is attending classes about 20 miles away, at a school affiliated with our church. When I was teaching, I went to some conferences there. So, it’s kind of fun to make that connection. And of course it’s not nearly as hard sending a child to school when they’ll be back each night.
Piano lessons started as well. It was great to see almost all of my students return, and to welcome two new ones. As a teacher, I always loved August. It’s fun to retain a little of that excitement through piano lessons now.
Sunday at church, I had a treat. I ran into commenter Margaret, which doesn’t happen too often. She gave me a jar of the delicious homemade relish she had blogged about making earlier in the week. I thought at the time that it looked delicious, so how fun to actually receive a jar! It will show up in the menu this week.
Here are the plans for the week’s eats:
Monday: Skinny Chicken and Spinach Alfredo — I’m not sure how “skinny” it is, but it’s good. I have a bit of the sauce in the fridge that I need to use up. It’s amazing how often the menu is dictated by what needs to be used.
Tuesday: Hot dogs with Margaret’s relish 🙂 and to use some of the garden zucchini in a different way, I found a recipe in a recent Good Housekeeping for zucchini bites. I can’t find the exact recipe online, but this looks close. (Wednesday note: the relish was wonderful! Thanks, Margaret!)
Wednesday: Skillet Taco Pie — from the old “family favorites” cookbook
Thursday: Chicken Parmesan — easy, and always a favorite (photo at top of post)
1 jar marinara sauce
4 chicken breast halves
2/3 c. shredded mozzarella
1/4 c. bread crumbs
2 T. olive oil
Pour marinara sauce in bottom of ungreased 12 x 8 dish.
Place chicken over sauce.
In small bowl, mix cheeses, bread crumbs and oil. Sprinkle evenly over chicken.
Bake at 350 30-35 min.
Serve over noodles.
Maybe I’ll cook green beans from the garden too, if there are enough by Thursday. I picked them for last Friday’s dinner, and they were good.
Friday: Cincinnati Chili — because what’s a week without a recipe from the famously large Duggar family, of “Counting On”?
