Happy Menu Plan Monday! Here’s a photo of chocolate lover’s delight, which I made to celebrate daughter #3’s first day of her junior year of high school. It’s been a long-time favorite; basically, just prepare a pan of brownies, cut them into pieces, and then layer them with a carton of Cool Whip and one prepared box of pudding. Then top with a chopped candy bar of your own choice. YUM.

Along with my daughter starting a school year, I was able to go to the State Fair on Saturday. Maybe I’ll post about that later. It was a nice day, clear although a bit hotter than I like. This week daughter #1 begins college classes, and next week daughter #2 does. My piano students start returning today, which is always fun.

Here are the plans for the week’s menus:

Monday: leftover buffet — the fridge is filling up

Tuesday: I plan to make one of those “one pan” meals where I put tilapia fillets and various vegetables on a pan, then drizzle with olive oil and seasoning, and bake.

Wednesday: : State Fair Subs — really tasty.

Thursday: Savory Bean and Spinach Soup — I just made this a week or so ago, but we really liked it and it disappeared fast —

2 qt. chicken broth

1 #10 can diced tomatoes

1 #10 can northern beans

1/2 box long grain wild rice

1 large onion, diced

garlic powder

parsley

salt/pepper

1/2 bag of fresh spinach

Parmesan cheese

Friday: Hamburger Straganoff — this was my dad’s favorite recipe when I was growing up, and we always called it straganoff rather than the more-often-heard stroganoff. He and my sister are coming tonight to watch daughter #3’s first marching band performance of the season.

l lb. gr. beef
l/2 c chopped onion
2 T. flour
l t. salt
l/8 t. garlic salt
3/4 t. pepper
l/4 c. mayonnaise
l/2 c. sour cream
l can Cr. of Chicken Soup
l small can mushrooms (optional)
Brown beef and onions and add remaining ingredients in order given.  Serve over rice or noodles.

  1. Hope the band gets off to a great start! The soup sounds really yummy. I posted my two meals on FB yesterday, though it looks like I’ll have to do more–Patrick ate both leftover Turkey burgers last night. Hopefully there will be something easy for me when I get in from class tomorrow.

  2. I love hamburger stroganoff but never make it now. It would take forever for me to eat all of that so that, like so many other things, is no longer a part of my menus. It used to be my go to recipe when I had friends visit in Cedarville. Are your dad and sister staying overnight? I’m tempted to drive down to see this, but would I be able to get up on the bleachers?

  3. Your meals sound so delicious and that dessert is like WOW!! I know I’d really enjoy seeing the band’s performance. Hubby doesn’t have much appetite since his operation so I will take it day-by-day this week. It’s been a lot of years since I had a daughter in band and I remember how enjoyable it was. I wish the band lots of contest wins.

  4. I was going to make a bacon/tomato sandwich for supper but finked out and had cereal with blueberries and a few mixed nuts with a glass of chocolate milk. Oh yes, I found a decorated cookie a little girl who liked me at school gave me on the last day of school. I put it in the freezer and just got it out. My large freezer and ice box are filled ALL the time! You have no idea!! Sometimes I go on rampages and tell myself I won’t buy anymore until I make what I have go down!

  5. You have inspired me to make hamburger stroganoff sometime soon! It is soooo good, and I haven’t made it at all during the past two years while my husband has been on a feeding tube. This cooking for one is no picnic, that’s for sure. Thank you a bunch for the sample of your special chocolate dessert!
    It was very good, but I will not be making it for myself because I have lost 13 lbs. and I could gain it all back in a week eating those sweets. 🙂
    This week I am trying to use up odds and ends around the house before I leave on a bus trip to the Upper Peninsula of MI on Sunday. No grocery shopping for me this week. Yay!

  6. Hamburger Stroganoff is my youngest son’s favorite dinner – he asks for it on his birthday every year.
