Menu Plan Monday 6/26/17

Happy Menu Plan Monday! I hope the week has started well for each of you. It was a typical summer week here: the girls working on 4-H (records and books are due to the leader today), me working in the garden and riding my bike (since I have “graduated” to an ankle wrap from the air boot, I have been riding my bike, which seems to work fine). The highlight of the week was a friend’s Tea Party on Saturday, in honor of the Queen’s Sapphire Jubilee. Yes, I really do have a friend who threw such a soiree! And it was wonderful, let me tell you. Actually, I will tell you — complete with photos so you too can attend — later this week. You won’t want to miss it!

My husband is back from his work trip to France, so I’m back to normal cooking. Here goes:

Monday: leftover buffet (actually, daughter #2 and I will eat at the annual 4-H pizza party/final meeting). Lots of leftovers built up when my husband was gone. He is by far the biggest eater of the bunch.

Tuesday: Chicken with Pineapple Salsa — okay, this is a recipe my sister gave me from her friend, who sells Pampered Chef. Basically, you bake chicken (adding seasoning by Pampered Chef), and then serve it with this Pineapple Salsa. Sounds good — we’ll see.

Wednesday: Fiesta Chili Bake — I have made this for years and we like it — got the recipe from a Del Monte tomato label.

Thursday: Tortilla Soup (a perennial, easy favorite — suggested by daughter #3, who said that she likes soup even when it’s hot outside …)

16 oz. can refried beans

14.5 oz. chicken broth

5 oz. chunk chicken (I usually just cook 1 chicken breast)

15.5 oz. black beans, rinsed

3/4 cup salsa

Combine all ingredients.  Bring to a boil, then reduce heat and simmer 10 min.

Crumble a few tortilla chips in the bottom of each bowl.

Ladle soup over chips and sprinkle with cheddar cheese.

Friday: Pasta Alla Genovese: Basically, it’s pasta mixed with French-cut green beans and basil pesto sauce. Very tasty (sorry, my recipe is torn from a magazine. One of these days I’ll type it up). It’s shown in the top photo, and I remember it was a recipe that Michael J. Fox’s wife made and submitted.

  1. I’m trying to figure out why Daughter #3 will not be eating at the 4-H event since she is also doing 4-H. Sounds like you’re back to cooking full force. Did Hubby bring home any goodies for you from France?

  2. Tonight we’ll make some small individual pizzas. Tuesday my hubby will have dinner at a meeting and I’ll eat leftovers from the weekend. Hopefully, by Wednesday I will somehow be inspired to cook for the rest of the week!! Lots of stuff in the freezer to pick from.

  3. The Queen Elizabeth Jubilee Party sounds fantastic! Can’t wait on the details and more pictures. Of your food picks for the week, I like the Tuesday one most. Tonight I plan to fix a couple of cube steaks with mushroom soup to bake in the oven since it is a cool day. Haven’t figured out what to put with it, since potatoes are on my list of 30 foods not to be eaten until my potassium levels drop. Otherwise, I would have some mashed potatoes with the steak. Hopefully, this food ordeal will be over soon, as I will have more blood tests in a week or so for my next family doctor appointment on July 10th. LEONA

  4. On the back of my mustard container, a recipe caught my eye: lots of mustard, a bunch of honey, chicken breasts and my slow cooker. This will be tried!!! But have to get to the store first. Today I’m doing a quinoa stir fry thing with chicken that is really good. Originally with tofu, but I really don’t like tofu…and chicken is a great substitute!
