Holiday World Firecracker

Happy summery menu plan Monday! It was a good week here. Our extended family enjoyed a day at Holiday World theme park in southern Indiana — more on that later in the week. If you’ve never been there, it’s worth a visit if you’re ever nearby. It’s a really clean park with some fun extras (free sunscreen, free drinks throughout the park).

Daughter #1 is off to another town for a summer job, daughter #2 is adjusting to life as a high school grad, and daughter #3 took health in summer school … and ended up finishing the work in just three days! She has not seen her grade yet, so hopefully working that quickly was not a bad decision. She starts summer band practices this week, and she and daughter #2 will be busy with 4-H in the coming weeks as well. Daughter #3 and I canned strawberry jam yesterday for 4-H. Every time I do that, I wonder why anyone would make jam that way instead of just making freezer jam. Freezer jam is a lot easier.

As for me, I did a presentation on King Ludwig at Germanfest here. I did the same thing last year. You would think it would be an ideal crowd for such a program — but neither time has resulted in much of a crowd (the first year — 2 people. This year — 5). I’m not sure what the issue is, but it seemed that most people there were more interesting in drinking beer, trying to polka, or watching a nearby group of costumed people sword-fighting. I’ve done presentations like this at local libraries, and they’re much better attended. Maybe the festival crowd is just wrong for listening to a speaker? Still thinking about this one.

Holiday World Dole Whip

None of my menu plans this week has a photo, so how about this for a food photo — Dole Whip at Holiday World! I had never had this outside of Disney before, so I was happy to find it here. It comes in pineapple or strawberry/pineapple twist. You can buy it just across from the Celebrations Theater, where the shows are performed.

Here are the week’s menu plans:

Monday: Baked Ziti — leftover from last week

Tuesday: Pesto Chicken Pizza — I have this pinned on Pinterest. Can’t remember if I’ve made it before, but it looks good.

Wednesday: pancakes and applesauce — my husband will be gone for a few weeks for work. He isn’t a pancakes fan, but the girls and I are 🙂

Thursday: Broccoli Lasagna  — again, my husband doesn’t like broccoli but I do, so I’ll be eating it a lot the next few weeks. I’ll probably have to leave out the mushrooms though as the girls aren’t fans.

Friday: BBQ Chicken Quesadillas — quick and easy.

  2. Glad you all got to go to Holiday World and that you had good weather. It sounds like fun.

  3. As usual, your menu for the week sounds tasty. We had Swiss Steak tonight with enough left over for a dinner later in the week. I will be making a Macaroni/Cheese/Tuna casserole for another meal or two also. Just got back from Ohio and Indiana so need to get back into a cooking routine. I will be looking forward to your blog about your trip to Holiday World. I really love that place! And I’d love some of that Dole Whip right now!! I would love to attend your lecture on King Ludwig. It would be so interesting.

  4. My leftovers were finished off yesterday. Today I was in Columbus part of the day so Chick Fil A provided my lunch. A sweet little old lady was working there. She said, “God told me to work here and I love it!” I am reminded of the song, “Little Is Much, When God Is In It!” I was there at 12 noon and it was a madhouse. I mentioned it to the manager and he said, “It’s like this every day!” Tomorrow I’m at an all day meeting. I may get a tenderloin for lunch from the Townhouse Cafe. They’ve run $1 off coupons for any sandwich in their Tribune ad. One of these days I will go to the garden and cut some fresh lettuce for salads.

  5. Both Monday and Friday menus really appeal to me! Alas, I got busy and made stuffed peppers last night for supper, so now I am stuck with 2 or 3 more meals of the left-overs, and I am tired of it already. This cooking for one is still not fun! It just began to rain “cats and dogs”, so I am hoping that we get some relief from this oppressive heat. Both yesterday and today were what I call “sun stroke” days. One of my uncles had a sun stroke many years ago, and it was almost as bad as having a regular stroke. Of course, he wasn’t paralyzed although he could never take much heat after that for the rest of his life.
