Menu Plan Monday 5/8/17

Happy menu plan Monday! Part of our Saturday included a trip to a greenhouse with daughter #3 and a friend. It was in Amish country nearby, and I loved seeing the pretty skies full of clouds, laundry hanging on lines, Amish buggies going by on the road, and Amish kids running around in their plain colored clothes. Another world, and yet not far from where I live. Amish people run the greenhouse, and it has great plants at good prices. Once we get past a frost warning tonight, I’m hoping to get most of my purchases in the ground.

Then, we stopped at a little ice cream shop in town. We were deciding on ice cream flavors, when we spied pieces of cake in a case on the counter. The pieces were about 4″ square — and just $1.25! What a deal! This was Kit Kat cake. Really good!

Daughter #1 ran the Indy Mini that same day, and is now home from college — at least briefly before heading out of the country on a trip. Daughter #2 graduates in a couple of weeks. Things are so busy, but in a fun way 🙂

So, here is the menu plan for the week:

Monday: leftover buffet — the fridge is pretty full, and needs to empty out for later in the week.

Tuesday: Vegetable Lentil Soup — I’ve made this before. Don’t remember a lot about it, but it sounds good. Naan bread is on sale this week, so I’ll buy that also. We’ve been having cool, wet weather, so soup still sounds good.

Wednesday: Cheeseburger Wraps — Daughter #2 turns 18; this is her birthday choice. Her dessert: Chocolate Chip Cookie Cake. Delish!

Thursday:  Football Fiesta Casserole — Daughter #1 turns 20 on Tuesday, but we will celebrate today since she may be gone on Tuesday. This is good! For dessert, Chocolate Lava Cake and ice cream. YUM!

Friday: Foil Packet Taco Chicken — another popular menu option around here. Easily to individualize.

Saturday: Tater Tot Casserole — usually I take weekends off from cooking, but this weekend relatives are coming to celebrate the girls’ birthdays. So, here is what I’ll make. For dessert, a cake from Coldstone Creamery.

  2. How fun that a recipe I shared is a birthday dinner! Hope she has a great day and that graduation isn’t too emotional for everyone! It can be so hard for some. My daughter never wanted it to end. I couldn’t wait to leave! lol Enjoy your week.

  4. Sounds like a great week for your family. The food and desserts are going to be delicious! I think the picture of the nursery plants is beautiful and it was so uplifting to see the colors. We just got back from a trip to the Florida Panhandle. The weather was lovely and we had several delicious meals. Karen baked me a lemon birthday cake from scratch, even made the lemon curd filling. She said it had no calories but I know better! We’ll be eating light suppers this week.
