Prince William's Cottage pie

Welcome to Menu Plan Monday, friends! This is one of those times of the year where things happen really quickly. Around here, all three girls have birthdays, I have my big annual piano recital, there are band concerts, dance recitals, AP tests, and so much more. I’m sure you are busy, too. And thankfully, the weather outside forms a beautiful backdrop for all this activity.

This week, we will head down to IU on Thursday to take a car to daughter #1. She’ll be running in the Indy Mini on her way home, and we’ll be bringing her fish (as well as a couple of rabbits she is pet-sitting this summer). So this summer we’ll have a tank of fish, 4 rabbits, a chinchilla, and a hedgehog. We’re almost an animal shelter!

Here is the week’s menu:

Monday: Prince William’s Cottage Pie — in honor of the Royal Wedding anniversary over the weekend. Plus, this is good! Congrats to William and Kate πŸ™‚

Tuesday: Skillet Lasagna – easier than β€œregular” lasagna, and good. Plus, I have tomatoes that were on sale a week or two ago that need to be used.

Wednesday: Poppyseed chicken β€” a long-time favorite.

Thursday: Easy Manicotti — Daughter #2 is cooking since I won’t be home until close to piano lessons just before dinner. Nice!

Friday: Spinach Cheese Bread — this is a recipe I haven’t made in a while, but we used to enjoy it. I don’t use a hot roll mix or pre-made bread dough as the recipe calls for; I usually just mix up a bread dough mix in the bread machine.

  1. I made up a large cauliflower salad. It takes similar ingredients to potato salad. I found it on line. I also made a 9 x 13 of my hominy dish that I bake. So I will eat that the entire week+ Wednesday evening I eat at the family night dinner. They are having a baked potato bar this week.
    Pretty amazing that your college girl is nearly half done with her Indiana University stint! Fast fly the years!

  2. Happy Happy Happy, Birthday Birthday Birthday! Have fun celebrating. The poppyseed chicken sounds delicious and I’ll have to try it!

  3. I won’t be cooking this week since we will be attending grandson’s Confirmation. I will enjoy the break. Your menu sounds delicious and your week sounds so busy. I should be able to get some reading done on this trip. Yeah!

  4. As several people have said, you’ll be busy this week. I’m praying things will go a little smoother for me this week. Don’t know yet what I’ll be eating.

  5. This week’s recipes all sound very good to me, especially since I am rather hungry as I write this. πŸ™‚
    In fact, it is difficult for me to pick a favorite with so many offerings. The skillet lasagne and Manicotti pasta dish with the spinach sounds tasty and mostly healthy. You can’t go wrong with spinach!
