Happy Monday to all you Menu Plan Monday friends 🙂 I have had a busy week, so I hope you’re up for several photos. Up at the top, that’s the pie I made for Pi Day last week. I was going to go with basic apple, but daughter #3 requested Black Forest Cherry Chocolate pie. I have to say that it was delicious and not too much work. Recommended.
The weekend was busier than usual — first, daughter #2 and I headed to a local production of Swan Lake. LOVED it — the ballet, the live philharmonic music, Tchaikovsky, the costumes, the sets, the drama of the story itself — awesome. My enthusiasm wasn’t even dampened by having to evacuate the theater for about 20 minutes at just after intermission for a … fire alarm? Never made clear.
Daughter #1 returned from a spring break adventure out West and stopped by for about an hour Friday before heading back to college. Not long enough, but I will take whatever I can get!
Homemade Bonsai Pots
Saturday brought the monthly bonsai club meeting for daughter #3 and I, and the club made clay pots — first time we’ve ever done that. They’re still drying, so hopefully they’ll turn out okay. The club has so many talented members who were willing to help us know what to do, provide us with molds/forms like these to help, etc. Several members made “free form” pots, but I didn’t feel like my talent level was high enough to try that.

Whew. And now it’s Monday. Let’s dive right into the week’s menu plan:
Monday: Crockpot chicken taco fixings — I made these last month and they were so good. Just mix this up in the crockpot and serve with tortillas.
Tuesday: Cheeseburger Wraps — yes, I made them recently, but they’re very popular 🙂
Wednesday: Daughter #1 does a lot of cooking at college. Here is a potato soup recipe she created using bits of various recipes and says is really good:
7-8 potatoes, peeled and diced
about 10 baby carrots, chopped
1/2 can corn
1 can cream of chicken soup
1 can chicken broth
1 tbsp garlic powder
1 tsp black pepper
1/2 tsp salt
1/2 tsp cumin
1 package cream cheese
