Happy Monday to all you Menu Plan Monday friends 🙂 I have had a busy week, so I hope you’re up for several photos. Up at the top, that’s the pie I made for Pi Day last week. I was going to go with basic apple, but daughter #3 requested Black Forest Cherry Chocolate pie. I have to say that it was delicious and not too much work. Recommended.

Swan Lake

The weekend was busier than usual — first, daughter #2 and I headed to a local production of Swan Lake. LOVED it — the ballet, the live philharmonic music, Tchaikovsky, the costumes, the sets, the drama of the story itself — awesome. My enthusiasm wasn’t even dampened by having to evacuate the theater for about 20 minutes at just after intermission for a … fire alarm? Never made clear.

Daughter #1 returned from a spring break adventure out West and stopped by for about an hour Friday before heading back to college. Not long enough, but I will take whatever I can get!

Homemade Bonsai Pots

Saturday brought the monthly bonsai club meeting for daughter #3 and I, and the club made clay pots — first time we’ve ever done that. They’re still drying, so hopefully they’ll turn out okay. The club has so many talented members who were willing to help us know what to do, provide us with molds/forms like these to help, etc. Several members made “free form” pots, but I didn’t feel like my talent level was high enough to try that.

Sound of Music

middle school Sound of MusicSaturday night, the girls and I traveled south to watch my niece in her middle school’s production of The Sound of Music. I have always loved that show, and they did a really nice job!

Whew. And now it’s Monday. Let’s dive right into the week’s menu plan:

Monday: Crockpot chicken taco fixings — I made these last month and they were so good. Just mix this up in the crockpot and serve with tortillas.

Tuesday: Cheeseburger Wraps — yes, I made them recently, but they’re very popular 🙂

Wednesday: Daughter #1 does a lot of cooking at college. Here is a potato soup recipe she created using bits of various recipes and says is really good:

7-8 potatoes, peeled and diced

about 10 baby carrots, chopped

1/2 can corn

1 can cream of chicken soup

1 can chicken broth

1 tbsp garlic powder

1 tsp black pepper

1/2 tsp salt

1/2 tsp cumin

1 package cream cheese

sour cream

Cook the first part of the ingredients in a crock pot for 8 hours.
Take out about 1/3 of the soup and put it in a large bowl. Add 1 package cream cheese to the bowl and mash all of it well with a potato masher. Sometimes I also add a few spoonfuls of sour cream if I have it.
Put everything back in the crock pot and stir well, cook for maybe another 15 mins until the cream cheese is dissolved.
Serve with cheddar cheese.
Thursday: fish night with … green beans maybe?
Friday: make-your-own individual pizzas with homemade crust.

  1. I think I’ll try the potato soup, substituting cauliflower, after I recover from surgery. It sounds good.

  2. I must say the Nazi flags woke me up! Didn’t expect to see THAT. I’m surprised they were allowed to use them. I’m afraid I’d wonder what Confederate Flag they are now hanging next too. Sad but true in today’s society. Caroline’s soup DOES sound good–similar to Paula Deen’s which we love. I’m nicely envious of Swan Lake–it’s a favorite of mine.

  3. Tonight we are having a Hamburger Quiche which my daughters called Cheeseburger Pie when they were little. They loved it. It’s ground beef, cheese and some other stuff baked in a regular pie crust. Tomorrow evening we’ll eat out since I have a late afternoon dental appointment. I hope I’ll be able to eat. I need to think about the rest of the week. Your meals sound fabulous. I want a piece of that pie! Since I saw the lovely ballet picture, the music from Swan Lake keeps playing in my head! Loved your blog today.

  4. My mouth is watering for a piece of the Black Cherry Chocolate Pie! Sure does look pretty, so I’m betting that it tastes very good, too. Think that I will try Caroline’s Potato Soup recipe soon. Sounds delicious!
    Like her it is a favorite thing of mine to tweak recipes to my liking, and sometimes I do it for lack of having all of the ingredients on hand.
    The play and ballet are both absolute favorites of mine! Lucky you to have two such exciting outings all in the same weekend.
