Menu Plan Monday 3/6/17

Happy Menu Plan Monday, everyone! I usually write these posts on Sunday afternoon, but things got away from me and it’s Sunday evening, almost time for the Victoria finale on PBS. Are you watching? The girls and I are enjoying it.

It’s been a busy weekend with some dog-sitting for a friend, accompanying a student on a music camp scholarship audition, playing organ for church, and more. What is new in your world? I always enjoy your comments. Again, we’ve had cold, windy weather this week mixed with more springlike weather as well. It’s kind of early for this, but I will take it. I just hope our budding trees don’t get nipped, and that the flowers coming up won’t be killed by frost still to come.

Here’s this week’s plan:

Monday: Cheesy Tater Tot Crock Pot Casserole — I always need something that can be made ahead on Mondays, since piano lessons run right up to 6:00.

Tuesday: Lasagna Soup — a favorite. Like lasagna, but soup! (pictured at the top)

Wednesday: Chicken Stir Fry — no real recipe; I cut up a chicken breast and cook in a skillet on the stovetop and then add a diced carrot, snow peas, a bag of alfalfa sprouts, and soy sauce. Serve with rice.

Thursday: Taco Soup — lots of soup requests this week. This recipe looks similar to mine, but mine doesn’t have ranch dressing mix. Also, I’m not a fan of hominy so I will substitute corn.

Friday: daughter #2 and I are heading out of town for a ballet performance, so the others will be on their own …

  1. I am a big fan of hominy. I just asked in Aldis a few days ago where their hominy was. I was told they do not carry it on a regular basis, but get it from time to time. It is nice you get feedback from your family on what to cook! The day is fast approaching when they won’t be around to ask.

  2. Which ballet will you see? In Indy? I love seeing live ballet–so much more to see than when it’s shown on tv, plus the atmosphere is right. I always think of the Tzars going….

  3. Sounds like another busy week for you. Your meals sound wonderful. As usual, I haven’t taken the time to plan our meals for this week. So I better get busy since dinner is fast approaching!! Enjoy the ballet. What a great outing for you and your daughter.

  4. The soup picture at the top of your post looks good enough to eat right now! I am eager to hear about the ballet that you and Isabel plan to attend. Which ballet and where?
