Menu Plan Monday 1/2/17

Happy New Year to each of you! I hope you each welcomed in the new year and are excited about at least some aspects of it. And if you aren’t — come up with some fun ideas for yourself. Yesterday at church, the pastor said something like if we were all waiting for someone else to improve us or make our lives better, most of us would end up waiting a very long time. Much of life we can’t do much about, but then again, there’s much that we can do to improve our lots in life.

So this week, my oldest daughter heads back to college (I will really miss her, but am so proud of her work), and my younger two head back to school. My piano students return beginning on Thursday, and I have two lunches with friends lined up.  Yay for a good week!

Menu planning also gets back to normal again after a few weeks of needed-and-enjoyed lounging around. Here is the plan:

Monday: Wendy’s Chili– good on a wintry day, plus I have tomato juice in the fridge …

Tuesday: Fig and Goat Cheese Stuffed Chicken Breasts — this is becoming a favorite. Fancy looking, yet easy to make.

Wednesday: State Fair Subs — I think these look so good! And my husband will be gone, so I may actually buy some sausage to make them “as is” (he isn’t a fan of sausage).

Thursday: pancakes and applesauce — the girls and I love this dinner, husband, again, not so much.

Friday: Cheesy Tater Tot Casserole — another easy favorite, and crockpot prep is always a plus!

And with that, the first week of January is a wrap. How was your Christmas? New Year’s? Any big resolutions?

  1. I made Lees’ slaw on New Year’s Day, so I got some cabbage in on New Years. Add to that, cabbage is GOOD for all of us! I need to start undressing my home from the holidays. It is a big job and a bit of a downer for me. Nobody knows how much I enjoy MY Christmas tree in the family room. My Lazy Girl chair is near the tree and it gives me J O Y !
    As you used to say as a small child, “Christmas is over, but there’ll be another one.”
