Happy Thanksgiving week to all you friendly people! Thanksgiving sneaked up on me this year, I think because of the election. I enjoy Thanksgiving because it’s largely a stress-free holiday, and besides — we all have many things to be thankful for. In a Bible study I’m in, we were discussing being thankful lately. The Bible teaches us that we enter God’s gates with thanksgiving, and His courts with praise. The more thankful we are, the more at peace we will feel. So, I’m going to try being more conscious of being grateful.

In the kitchen this week, I cut up the pumpkin we had on the front step and baked the pieces, then put them through a food mill. I have about 10 cups of fresh pumpkin puree in the freezer, which will be great for making pumpkin bread, pumpkin muffins, etc. I made this pumpkin bread over the weekend and it’s already almost gone.

Monday: Skinny Chicken and Spinach Alfredo — I’m not sure how “skinny” it is, but it’s good (see top photo).

Tuesday:  Foil Packet Taco Chickena family favorite; easy to individualize so it’s great for picky eaters. Recently I was discussing foil packet meals with a grocery clerk. She said that when she makes them, she adds an ice cube to each to help steam the items inside. I would not have thought of this — and I still kind of wonder if it would make the contents runny — but I am intrigued by the idea and may try it this week.

And the rest of the week we will celebrate Thanksgiving with relatives. What does your week hold? Seriously, it is wonderful to have people take time out of their day to stop by here, read, and comment. It’s not much fun writing to myself 🙂

  4. HAPPY THANKSGIVING to you and your entire extended family! We will celebrate Thanksgiving Day with lots of Thomas relatives in Markle. Scott, Kathy, and Carter will be joining us all the way from WI. I’m so pleased that Joe will still be able to enjoy the day, even without being able to eat any of the scrumptious meal due to his Bolus feeding tube.

    I really like the sound of your spinach and chicken meal! It is going on my list of something new and different for me to try. I am very thankful for family and friends who lend me lots of support through these trying times. Praise God for his faithfulness and the peace that he gives me, in spite of it all!
