Happy Menu Plan Monday! We had our first frost this week, so I gathered all the ripe and non-ripe tomatoes and peppers from the garden and pulled up the foliage. Brought in/froze some herbs; pulled up the tomato cages, even brought in the forget-me-not flower and a geranium. Speaking of which, we seem to have a squirrel as a “pet.” Here you can see him playing in the dirt (burying a nut?) near a geranium. He’s wreaked a bit of havoc around the yard, but I have to admit he’s kind of fun to watch.
Daughter #3’s band season finally ended Saturday night (well, actually Sunday morning around 4 a.m.) when she returned home from Bands of America Grand National competition. The band made it to finals, which was a huge accomplishment this year. The excitement of the day was marred this morning when we learned that a member of another finalist band from Indiana had been killed (along with other family members) in a car accident on the way home. Life — it is so unpredictable and so precious!
It’s hard to believe that this is the final week before Thanksgiving week. Daughter #1 will be home from college late in the week, yay! It is always so much fun having all three girls home together.
Here’s the menu plan for the week:
Monday: Roasted Chicken and Vegetables – planned for last week, but an unplanned leftovers night has moved it to here. The house smells great when this is baking! Cut up a couple of chicken breasts, a couple of carrots, a couple of potatoes – put in a roasting pan, then top with 1/3 c. olive oil and a packet of dry onion soup mix. Bake 45 minutes at 400.
I make this a lot, and it’s great for a night like tonight when I have 5 piano students. I can chop everything up in the afternoon, and then just pop it into the oven so it will be ready at dinnertime.
Tuesday: Make your own pizza — I make crusts, each person puts on toppings of choice.
Wednesday: Chicken Curry (I’ve made this several times, and it is good)
Thursday: Calico Beans with naan bread purchased at a weekend stop at Trader Joe’s.
Friday: fish night — also roasted vegetables. I made them a few weeks ago, and really liked them!
