Hi everyone and welcome to another menu plan Monday! My weekend involved my sister visiting, and a full Saturday at a band festival our school hosted. I worked in the concession stand and then watched bands for a few hours, ending up with daughter #3’s. There she is, if you see the free lines of students going toward the back, she’s the first one in the far left line, playing her flute. She does a good job, and the show is always fun to watch. There are just 5 weeks left of marching band season, and although it’s a really busy time, I always enjoy it.
The flute players take turns hosting a breakfast on competition days. Saturday, the mom had these beautiful cookies made for each girl. Small world: I give piano lessons to this mom’s kids, and the cookies are made by another mom of some of my piano kids.
My sister brought her new hedgehog, who met our hedgehog. It was really cute watching the two of them run around!
Menu Plan Monday
So, on to the week’s recipes:
Monday: State Fair Subs — new recipe I found online, doesn’t it look good? I’ll probably use chicken instead of sausage because many here aren’t big on sausage.
Tuesday: Tortilla Soup (a perennial, easy favorite)
16 oz. refried beans
14.5 oz. chicken broth
5 oz. chunk chicken (I usually just cook 1 chicken breast)
15.5 oz. black beans, rinsed
3/4 cup salsa
Combine all ingredients. Bring to a boil, then reduce heat and simmer 10 min.
Crumble a few tortilla chips in the bottom of each bowl.
Ladle soup over chips and sprinkle with cheddar cheese.
Wednesday: Fig and Goat Cheese Stuffed Chicken Breasts — remember when I told you about Just Jan’s spreads? This is a recipe I learned about then, and it uses the fig spread. I wouldn’t have thought I would like it, but I did (see top photo).
Thursday: Pizza Pie Bake — I’ve hand-written this recipe, but the one linked here looks similar. Uses Bisquick (I used to use Bisquick a lot; now not so much — is it just me, or has it become less popular?). Most people here enjoy pizza, and maybe this would be a nice change from the usual type I make.
Friday: Roasted Chicken and Vegetables – a family favorite. The house smells great when this is baking! Cut up a couple of chicken breasts, a couple of carrots, a couple of potatoes – put in a roasting pan, then top with 1/3 c. olive oil and a packet of dry onion soup mix. Bake 45 minutes at 400.
