Menu Plan Monday 10/10/16

Fig and Goat Cheese Stuffed Chicken Breasts

Homestead Spartan Alliance Marching Band TurnHi everyone and welcome to another menu plan Monday! My weekend involved my sister visiting, and a full Saturday at a band festival our school hosted. I worked in the concession stand and then watched bands for a few hours, ending up with daughter #3’s. There she is, if you see the free lines of students going toward the back, she’s the first one in the far left line, playing her flute. She does a good job, and the show is always fun to watch. There are just 5 weeks left of marching band season, and although it’s a really busy time, I always enjoy it.

The flute players take turns hosting a breakfast on competition days. Saturday, the mom had these beautiful cookies made for each girl. Small world: I give piano lessons to this mom’s kids, and the cookies are made by another mom of some of my piano kids.

2 African Pygmy Hedgehogs

My sister brought her new hedgehog, who met our hedgehog. It was really cute watching the two of them run around!

Menu Plan Monday

So, on to the week’s recipes:
Monday: State Fair Subs — new recipe I found online, doesn’t it look good? I’ll probably use chicken instead of sausage because many here aren’t big on sausage.

Tuesday: Tortilla Soup (a perennial, easy favorite)

16 oz. refried beans

14.5 oz. chicken broth

5 oz. chunk chicken (I usually just cook 1 chicken breast)

15.5 oz. black beans, rinsed

3/4 cup salsa

Combine all ingredients.  Bring to a boil, then reduce heat and simmer 10 min.

Crumble a few tortilla chips in the bottom of each bowl.

Ladle soup over chips and sprinkle with cheddar cheese.

Wednesday: Fig and Goat Cheese Stuffed Chicken Breasts — remember when I told you about Just Jan’s spreads? This is a recipe I learned about then, and it uses the fig spread. I wouldn’t have thought I would like it, but I did (see top photo).

Thursday: Pizza Pie Bake — I’ve hand-written this recipe, but the one linked here looks similar. Uses Bisquick (I used to use Bisquick a lot; now not so much — is it just me, or has it become less popular?). Most people here enjoy pizza, and maybe this would be a nice change from the usual type I make.

Friday: Roasted Chicken and Vegetables – a family favorite. The house smells great when this is baking! Cut up a couple of chicken breasts, a couple of carrots, a couple of potatoes – put in a roasting pan, then top with 1/3 c. olive oil and a packet of dry onion soup mix.  Bake 45 minutes at 400.

What’s new in your world this week? I always enjoy reading what you have to say!

**A housekeeping note: a couple of people have mentioned to me that they are used to getting my posts in their email each day. Apparently, these emails have stopped (I have no idea why). If you would like to get posts via email, look along the right side of the blog and you’ll find a place to subscribe. Perhaps try signing up again? I’m sorry for the inconvenience.

  1. Bisquik was a victim first of fat-free, then gluten-free or something. I use it now and then though. We do LOVE the chicken pot pie with Campbell’s soup (cringe to admit it!!!!) and biscuit top. The sub sounds great–they don’t like turkey or vegan sausage?

  2. How did you know whose hedgehog was whose? They look so much alike, I’m surprised you could tell them apart after you allowed them to run around together.

  3. So the hedgehogs had a reunion! They look about identical to me! What fun for Isabel!
Recently I bought a bag of potatoes, after not having any for a good while. Day after day I microwave myself one large one for my main meal & supplement it with other things.

  4. We saw all the cars in the high school parking lot on Saturday. Glad everything went well! Your menus sound delicious. My favorite use of Bisquick is for sugar/cinnamon/buttery monkey bread!

  5. Delicious sounding meals! I made a new soup recipe and really liked it but hubby didn’t. However, there’s enough for leftovers so he’ll have to eat it at least one more time. Loved the pictures in today’s blog. The hedgehogs are just so cute. What are their names? I am one of those people who no longer get your blog. So I have marked you as a ‘favorite’ and log on everyday. I’ve tried everything I can to make it come to me automatically but that hasn’t worked.

  6. Loved all of your pictures! You had a great day for the band contests!! Not too hot, not too cold, but just right, just like Goldilocks and the 3 Bears. 🙂 Those hedgehogs are the cutest! I’m sure that they will meet up again soon.
The State Fair Sub sounds easy and delicious, but I will use sausage when I try it.
