Menu Plan Monday 9/18/2016

Hi everyone, and welcome to another Menu Plan Monday! How was your weekend? Mine was nice; pretty quiet, but I like that. I had some of my piano student girls over on Saturday to “play” with some fun cupcake-making supplies I got recently. I will share more about that with you later in the week.

forget me not foliage

On the green and growing front, this is the current state of the forget-me-not flower seeds I got in Alaska on our trip. They were giving them out at one of the ports when we got off the ship. I was so excited when they sprouted — but now, as we enter the second half of September, I’m getting a little concerned that they won’t have time to flower. Fingers crossed!

Vancouver geranium

On another plant topic — I love my Vancouver geranium. It’s not blooming, but the leaves are so pretty. They are reminiscent of the leaf on the Canadian flag — and I bring this up since we flew out of Vancouver on our way home from Alaska.

Also out in the garden, I discovered about five ripe strawberries this week! I have no idea what that is about, but I am thrilled, since that’s more than I got to eat in May and June (I blame the little critters in the garden then. I haven’t seen any lately — and I don’t want to think too hard about why that might be). I just enjoyed the strawberries with yogurt. Yum!

Okay, on to the week’s menu:

Monday: Turkey Soup — I baked a turkey breast last week and saved the carcass in the fridge for this —

Tuesday: Tater Tot Casserole — I’ve had this “pinned” a while and it looks good. I also make the Duggar family’s Tater Tot Casserole, but this one looks a little more substantial.

Wednesday: Chicken, Spinach, & Bean Quesadillas — made before, good (see top photo). Hmmmm — link doesn’t appear to work anymore. Bummer. I liked the recipe, and now I guess it’s lost to me.

Thursday: Fish night — I bought a bag of tilapia recently at Aldi. I’ll make some type of vegetable with this as well.

Friday: not sure what I’ll do — I am making the 3-hour journey to pick up daughter #1 at college, and heading back straight to a football game, where we will watch daughter #3 perform with her band. Maybe those at home will have to fend for themselves??

  1. Good line-up of menus for this week! All sound very good to me!! Wednesday night really appeals to me. As for Friday when you are gone at dinner time, tell them to raid the refrigerator on their own, or get fast food nearby, or there is always P&J sandwiches right out of the cupboard. My weekend was good,too, as you will read on today’s e-mail. The biggest problem of the weekend was on Friday night when I found out that the car battery just as I was going to leave the garage to drive down to Village Inn for a take-out of a fish sandwich and zucchini discs. Ugh! Fred Johns came over and took Joe to Walmart to get a new battery, so we are good again. It was embarrassing to have to call the restaurant to tell them that I had no way to pick up the order, but I have since recovered from that. Sunday was the best day!

    I’m positive I would love the turkey soup. Did you put in noodles or rice? I’m sure I’d enjoy either.

  3. I am commenting on this today, Tuesday, because I didn’t get your blog yesterday. When I didn’t get one again today, I started to get worried. So I went online and found your blog and signed myself up again to get it emailed to me. My computer has been playing mind games with me lately. I am glad you are still on the internet and I enjoyed reading your menu for this week. Loved the plants. Strawberries in September? That is wonderful.

  4. Those geranium leaves are so pretty! I wonder if it was just all around not a great year for gardens? We didn’t get any zucchini until this week when one appeared but something got to it. Your menu sounds great!
