Menu Plan Monday 8/8/2016

Welcome to Menu Plan Monday, 8/8/16. Typing the date, I think of Princess Beatrice (she would be Britain’s Prince Andrew and Sarah Ferguson/”Fergie”‘s oldest daughter. I always remember that she was born 8/8/88, so a happy 28th birthday to her!

So, another hot and humid week it is here. We are pretty much in drought conditions, and most days I have to water all the potted plants outside. I pretty much leave the garden alone, but I’ve even tried to water it a time or two. It’s kind of amazing the way, even with so much dryness, the air still packs in so much humidity — but it does! How about where you are?

We took a short trip to Mansfield, OH over the weekend and enjoyed several things there. I’ll post about that later.

This is the final week for us before school starts. No piano students this week, but they too will begin the new year next week. College daughter still gets one extra week at home. So, here is the plan for food:

Monday: Wendy’s Chili — I know — chili on a 90-degree day? But it’s cool inside, and my husband has been requesting it for a couple of weeks now.

Tuesday: Chicken Parmesan — easy, and always a favorite

1 jar marinara sauce

4 chicken breast halves

2/3 c. shredded mozzarella

1/4 c. bread crumbs

2 T. olive oil


Pour marinara sauce in bottom of ungreased 12 x 8 dish.

Place chicken over sauce.

In small bowl, mix cheeses, bread crumbs and oil. Sprinkle evenly over chicken.

Bake at 350 30-35 min.

Serve over noodles.

Wednesday: Papa John’s pizza — made by Papa John; one of the girls requested it. A break, yay!

Thursday: Tomato and Corn Pie — made it last week, and I love it. It’s great for using garden tomatoes.

Friday: Chicken Cabbage Stir Fry — new recipe; looks good.

  1. Sounds like another week of good eating at your house. I wish I could send you some of our rain. Of course, I live in a sub-tropical part of Florida and summer is our rainy season. Everything is so green and lush! And the sun manages to shine some everyday as well. The downside is that it is hot and humid also.

  2. Again, your recipes look so tempting, although I would definitely leave the ginger out of the final recipe. Enjoy your chili this evening.

  3. Your menu plans are a great reminder that I need to spend time doing this again now that the girls are back in school. Today is there first full day back. It is hot and humid here as well, but I’m in the mood for chilli too.

  4. Ohh that chilli looks delicious! Why have I never thought about adding pasta before?!
