Welcome to the first Menu Plan Monday of August! This summer, like so many summers, is flying by. Just the other day, it seems, I was so excited about my oldest daughter coming home from college in early May. Now, a couple of weeks and she’ll be heading back. My second daughter will be a senior in high school! Daughter #3 has a full marching band season beginning. Always lots going on. All good things, but time passes so quickly!

Here in our parched part of the world, we got about an inch of rain this week. That was very welcome. Even though my tomato plants look pretty sad, I spy about 10 ripe or nearly-ripe tomatoes, so that will be good. Much of the garden has been or is in the process of being eaten, by rabbits I assume. A few days ago, I looked out at the garden and saw one rabbit. I opened the window to shoo him away, and another one popped up! Next year, I’m thinking I may need to invest in some type of temporary fencing. Anyone have some materials they’ve used that you recommend for this?

Okay, so here’s what the week’s cooking looks like:

Monday: Football Fiesta Casserole — always a favorite here (see top photo). Yes, I planned to make it last week — but by Friday, SOMEONE who shall remain nameless (honestly, I don’t know who it was) ate all the corn chips …

Tuesday: Tomato and Corn Pie — to use some of those garden tomatoes. I make this every summer. It’s good.

Wednesday: Pasta Alla Genovese: Basically, it’s pasta mixed with French-cut green beans and basil pesto sauce. Very tasty, and a favorite of vegetarian daughter #2.

Thursday: Make your own pizza — I make the dough, each person adds toppings of their choice to personal pan pizzas (my current topping is homemade pesto sauce, and maybe olives and onions — whatever I can find from the garden).

Friday: Tacos have been requested. I’ll have to buy some tortillas (we prefer these to hard shells) and round up toppings …

  1. I have the finest neighbors. Within the past week Elaine Pollert knocked one HOT HUMID evening. She had a bucket of just picked green beans and offered me as many as I would use. Yesterday there was a knock and it was Jennifer & Jeff, my neighbors. Jeff had 2 huge zucchini and Jennifer had 1/3 of a bucket of cherry tomatoes. Hopefully part of lunch today will be a special recipe for cherry tomatoes and fried zucchini slices. I’ll probably food process some of the zucchini as well. When I go to the grocery I mainly just buy milk, in the summer. I try to live off the land.

  2. As usual, you have made me hungry with your delicious-sounding recipes. Where we now live, there is no space for growing food but we live close to a great outdoor produce stand that sells locally-grown produce. They also sell homemade ice cream, jams, relishes, soaps, herbs, and other goodies. I love that place!

  3. I’d love to have some of those tomatoes you’re talking about. There’s nothing quite like garden-fresh tomatoes, which I almost never get to eat. We have a farmers’ market near here every Saturday morning in the summer. I’m sure I could have bought some there. The problem is, because it’s not part of my regular routine, I forget it each week until it’s too late. Bummer! Hoping I’ll remember this coming Saturday.
