A happy Menu Plan Monday to you all!

What has your past week been like? Typical summer week here, although the weekend was busy. Yesterday we traveled 3 hours away to enjoy a niece’s graduation celebration. The entire trip was made in under 24 hours due to work schedules — not ideal, but we are grateful for jobs 😉 This week is the week when 4-H projects are finished and taken to the fair, and foods items are prepared and taken in as well. The girls are not as “into” this as I was (and am), but still, it’s an exciting time of the year.

Everyone still eats this week, too. So here’s the plan …

Monday: Stir Fry — no special recipe; I just cook some chicken, alfalfa sprouts, carrots, and snap peas (from the garden) in soy sauce and serve with rice.

Tuesday: We’ll be visiting Chick-fil-A for their annual Cow Appreciation Day. Wear anything cow-like, get a free entree, all day long. We have enjoyed this day for years. I’ll confess I’m a bit disappointed this year that it’s just an entree (in the past, if you dressed like a cow, you got a full meal), but still — it’s very generous of the company. And, it’s fun. And — this is the day non-perishable items are taken to and judged at the fair, so I’ll be ready for a bit of a break.

One year, even the dolls got in on the action —

Wednesday: Make your own pizza — I make dough; each person creates his/her own pizza with toppings of choice. My current favorite is basil pesto sauce with onions.

Thursday: Cheese Steak Quesadillas — I’ve made these before and they are tasty.

Friday: Mexican Tamale Pies — another tried-and-true favorite.

  1. I have lots of leftovers in my icebox. Also in the garden,cabbage is ready to use so I’ll be making slaw this week. It will be more of a challenge due to the fact I am having my second ant invasion. It’s hard to cook around the sink when little ants are all over the place It seems the poison I put out is bringing MORE ants to the party!
    As to the dolls dressed up for Cow Day, I made the quilt they are reposing on. I am admiring how well the seams match up. Peruse it again. . . Along with eating, I am busy sewing Christmas gifts. Actually I’ve been working on the gifts
    since January and my work’s far from done!

  2. I loved the picture of the dolls. We don’t live near a Chick-fil-A so we won’t get to eat free. We are having pizza this evening but I don’t know what the rest of the week will be like. I need to get my act together!
