Menu Plan Monday: Food in Alaska

Today’s Menu Plan Monday is a bit different. I just returned (at 2 this morning, to be exact) from 11 days in Alaska. Thanks to all who visited the blog during that time. I don’t think I’ve been away from it for that long since its 2008 inception.

Needless to say, I don’t have a menu plan for the week ahead. But in the spirit of menus and food, I thought you might enjoy some pictures of our food in Alaska.

Here’s a peek at breakfast — loved the waffles. As you can imagine, it was great to not have to think about menu planning or cooking for 11 entire days. And it was actually a bit terrifying to have unlimited food available to me during that time as well …

I don’t even remember what this was. But I see pine nuts (yum), and it looks fancy, doesn’t it?

There was salmon everywhere — here, a plain piece of it, and a salmon and chives baked potato. Yum! It was great to have easy access to so much healthy and tasty salmon.

  1. I wasn’t hungry when I started reading your blog. After seeing the pictures of all that delicious-looking food on your cruise, I am absolutely starving! While you were in Alaska, I was in Ohio and yes, Indiana!! My old stomping grounds down on the Ohio River. Had a great time seeing our grandson graduate from high school and attending a big party for him. Those people in Ohio are so efficient that nearly 500 graduated in 1 1/2 hours!! We visited family in southern Indiana. In both states, we also had plenty of delicious food and of course, I ate too much. The good news is that when I got back to Florida and weighed, I had gained only one pound! Looking forward to hearing all about Alaska.

  2. I would love having access to all the food you could (reasonably) eat, but I sure wouldn’t have chosen salmon. I just don’t care for it. Isn’t that terrible?

    I can’t wait to hear news about the trip. Glad you’re back safely.

  3. Salmon and haddock are my very favorite fish entrees! Having been to Alaska twice, first in 1987 and again in 2014. Loved it very much both times! Those snow-capped mountains always inspire me, and both times I found it much warmer than I expected, but it was July and August so that isn’t much of a shock. Glad that you are back, and I cannot wait to hear more. 🙂
