Menu Plan Monday 5/30/2016

Happy Menu Plan Monday, Memorial Day edition! Are you doing anything special for the holiday? It’s a quiet day here, although I’ll still do the weekly grocery shopping. Last Friday, our extended family went to Holiday World in southern Indiana for the day. More on that later this week …

In the summer, I still give piano lessons to the kids who are interested (which ends up being 6 of the 18). Those are all on Tuesday, and that begins this week. It’s kind of nice and more laid-back in the summer — usually. We’ll see how this year’s group seems.

So, let’s get to the menu plan recipes for the week:

Monday: I have a mystery shop at a casual restaurant. No cooking. Yay!

Tuesday: Chicken Stir Fry. I don’t really have a recipe, but I just cook a chicken breast or two with carrots, alfalfa sprouts, and snow peas/snap peas (is there a difference?) in soy sauce and serve with rice. I was inspired to do this because the snow/snap peas are ready in the garden. Gotta love the first crop of the year being ready to eat!

Here is the next whole-grain roll recipe daughter #3 will be testing for 4-H. She’s made 2 different recipes so far. I thought #2 was better. She thought #1 was. 4-H can become confusing like that.

Wednesday: fish night — I will bake a few different types of fish — nothing fancy. Some type of vegetable as well.

Thursday: Fig and Goat Cheese Stuffed Chicken Breasts — remember when I told you about Just Jan’s spreads? This is a recipe I learned about then, and it uses the fig spread. I wouldn’t have thought I would like it, but I did.

Friday: Daughter #2 is wanting to test out several recipes this summer. It’s hard to believe, but she’ll be a high school senior this coming school year. How quickly kids grow up and are on their own, cooking their own dinners … So anyway, she’s making dinner tonight. I’ll update when I know what that will be.

  1. There are snow peas in the garden here, too. Also lettuce soon can be used.
    I am spending my Memorial Day by house cleaning my kitchen. I am also sewing Christmas presents. One done and a lot left to go! But, it’s May. . .

  2. Your recipe pictures always make me hungry! And I love the picture of the snow peas. They look delicious. I won’t have to do much cooking for the next couple of weeks with our Ohio/Indiana trip coming up, but eating in restaurants will put the weight on. I wish I had more willpower!

  3. I had a good time today. One of my friends asked me to take her to Kalamazoo because her family lives there. She has a car, but was in an accident last week, so didn’t think it was safe to drive it that far. We had good food including grilled hamburgers and hot dogs and brats, potato salad, a macaroni salad, deviled eggs, a dip that was unlike any I’d ever had before using a lot of cream cheese, potato chips, tortilla chips, a green salad made with spinach and lots of other things in it, various fresh fruit including watermelon, which I absolutely love, and one of my favorite pies: rhubarb/strawberry. Does it sound as if we had enough? We probably had other things too, but these are the things that come to my mind. It was a very, very good meal!

    And visiting with the new friends was also very good.

  4. I love snow peas, and the fig and goat cheese chicken breast sound intriguing! Good for Isabel learning more about cooking and volunteering to prepare a family meal!! I’m impressed with idea.
