Menu Plan Monday 5/16/2016

Welcome to another menu plan Monday! We’re having unusual spring weather here in the midwest — freeze warnings overnight 🙁 and several inches of rain in the last week. I’m hoping the coming weeks will bring some heat and drying for the sake of my plants outside.


My annual spring recital was held over the weekend. I love this chance for the kids to showcase what they’ve been working on during the year. And even if I’m feeling not so great about progress made overall, after a recital I always feel more enthusiastic. Way to go, kids!

Afterwards, there was lots of good food. But I can’t claim credit for it, since parents brought it all. Delegating is a good thing.

It’s a busy week ahead, with dinnertime activities on Monday, Tuesday, and Wednesday nights. These are always challenging, and my usual idea for nights like this is the crockpot. Here is the plan:

Monday: fish night — I’ll make some fish stick type, and some “plain” baked type to accommodate everyone’s taste. Maybe I’ll make mashed potatoes and green beans too?

Tuesday: Hawaiian Chicken with rice (crock pot again)

Wednesday: Cheesy Tater Tot Casserole (crock pot favorite)

Thursday: I have a mystery shop at a local Italian restaurant. Yum …

Friday: Lentil and Spinach Burritos — I’m not finding the recipe online, but it’s torn from a recent Family Circle magazine. Basically, lentils, cheese, rice, salsa, and spinach in a tortilla and baked.

  2. Loved the picture of you and your students. Congratulations! Just looking at that food table made me so hungry. Your menu for the week sounds great. I need to get back in the habit of planning meals ahead. At least I know what we’re having for dinner tonight so I feel good about that.
