Brick Street Chocolate Cake

Happy Menu Plan Monday! It’s been a busy week here, with the annual celebration of all three girls’ birthdays over the weekend. We made the Brick Street Chocolate Cake I posted the recipe for last week. You can see it on the left in the photo at the top. It was delicious — very chocolatey (1 cup of cocoa in the cake, another in the icing).

This week, I am grateful to have enough leftovers from last week to have a couple of nights off from cooking. That’s great, because I have several events this week and my annual piano recital Sunday. Next week, things start calming down, which will be welcome.

Monday:  Football Fiesta Casseroledaughter #1’s birthday choice. Strawberry/Rhubarb crisp for dessert (side note — this is a totally delicious strawberry rhubarb dessert as well, and I’ll be making it later in the season).

Tuesday: Skinny Chicken and Spinach Alfredodaughter #2’s birthday choice. Apple pie for dessert.

Wednesday: leftovers

Thursday: Chicken Stir Fry – I just cook chicken, a bag of alfalfa sprouts, a chopped carrot or two and snap peas in soy sauce, and serve with rice. Snap peas are coming up in the garden, but I don’t think any are ready to use quite yet …

Friday: leftovers again

  1. So happy I got to come to the birthday bash on Saturday. Happy Birthday to Carolina today. Next thing on my list is to get her birthday card ready to mail.

    That skinny chicken one is one that I would like to try. Now that you have your college girl who likes to cook and bake, your life may be a bit easier! Hope to see you Sunday at the Piano Recital as far as I know now.
