Happy Menu Plan Monday! It’s been a busy week here, with the annual celebration of all three girls’ birthdays over the weekend. We made the Brick Street Chocolate Cake I posted the recipe for last week. You can see it on the left in the photo at the top. It was delicious — very chocolatey (1 cup of cocoa in the cake, another in the icing).
This week, I am grateful to have enough leftovers from last week to have a couple of nights off from cooking. That’s great, because I have several events this week and my annual piano recital Sunday. Next week, things start calming down, which will be welcome.
Monday: Football Fiesta Casserole — daughter #1’s birthday choice. Strawberry/Rhubarb crisp for dessert (side note — this is a totally delicious strawberry rhubarb dessert as well, and I’ll be making it later in the season).
Tuesday: Skinny Chicken and Spinach Alfredo — daughter #2’s birthday choice. Apple pie for dessert.
Thursday: Chicken Stir Fry – I just cook chicken, a bag of alfalfa sprouts, a chopped carrot or two and snap peas in soy sauce, and serve with rice. Snap peas are coming up in the garden, but I don’t think any are ready to use quite yet …
Friday: leftovers again
