Menu Plan Monday 5/2/2016

Hi everyone! Happy Menu Plan Monday! How has your week been? It’s been busy here as usual, and the week ahead will be as well. This is such an exciting year to live in Indiana. Our primary election is tomorrow, and most Presidential election years we get pretty much no attention, since the nominees are almost always locked in by now.

But as you know, this year things are a little different. Our family is very politically … interested, I will say. I can’t really say active, because we’re not out campaigning or making phone calls, but we’re all interested in politics and it’s a topic you’ll find us discussing frequently. Middle daughter and I met Heidi Cruz about a week ago when she came to our town. Yesterday, the same daughter and I headed out to a local Donald Trump rally. I’ll share thoughts on that tomorrow. And today, perhaps as you read this, I am attending a Ted Cruz rally in our town, where radio host Glenn Beck will also appear. My oldest daughter attended a Bernie Sanders rally at her college last week (she’s not a fan of his, but couldn’t pass up the opportunity to observe. I gather it was quite interesting, to say the least). Hillary hasn’t made it here, but Bill Clinton was in our town Saturday. What an embarrassment of riches for someone who loves politics!

So, I guess this is actually a Menu Plan Monday post 😉 It’s an exciting week because my oldest daughter gets home from her first year of college late Friday. Congratulations to her, and I will be so glad to have her home! Relatives will be here Saturday to celebrate all three girls’ birthdays (they are all within a 2-week period in late April and early May). Busy, fun activities.

Here is the week’s menu plan:

Monday: tortellini — just a package I bought at Aldi a while back. Tomato sauce with it. Busy day calls for an easy meal —

Tuesday: Tortilla Soup (a perennial, easy favorite)

16 oz. refried beans

14.5 oz. chicken broth

5 oz. chunk chicken (I usually just cook 1 chicken breast)

15.5 oz. black beans, rinsed

3/4 cup salsa

Combine all ingredients.  Bring to a boil, then reduce heat and simmer 10 min.

Crumble a few tortilla chips in the bottom of each bowl.

Ladle soup over chips and sprinkle with cheddar cheese.

Wednesday: Lasagna Soup — because, although it is May, it has been quite cool/damp/rainy here the past week or so.

Thursday: Hamburger Casserole — torn out of a magazine recently. Looks good!

Friday: Chicken Curry — this is similar to my recipe.

Saturday’s birthday celebration will involve a taco bar and this delicious-looking cake.

  2. That soup is going on our Menu this month. I need some easy meals to finish up this insane school year. Yum.
