Menu Plan Monday 4/25/2016

Heidi Cruz Fort Wayne

Hello, friends! I hope you had a good week. Mine had a fun surprise. My middle daughter and I went to see Heidi Cruz when she came to town to open Ted Cruz’s campaign office here. We were in this crowded room, not knowing if we’d be able to see her above the taller heads around us when she came. Well, she made her entrance and stood right next to us as she gave her campaign talk. It was really neat! Of course, it’s hard to gauge someone based on ten minutes or so. But, she presented herself well and seemed kind to everyone I saw her interacting with. Have you encountered any candidates in this busy political year?

Chocolate Chip Scones

The Queen also celebrated her 90th birthday. In honor of her, I made these chocolate chip scones. They weren’t hard, and tasted delicious!

So, this will be a busy week ahead. My husband is gone for the next week or so on a business trip, so that always makes menu planning a bit more free and light-hearted. Daughter #3 also has a birthday (and her meal choice is an easy one for me)!

Here’s the week’s

menu plan:

Monday: Pasta Alla Genovese: Basically, it’s pasta mixed with French-cut green beans and basil pesto sauce. Very tasty, and a favorite of vegetarian daughter #2.

pasta ala genovese

Tuesday: Oven Roasted Chicken and Veggies —
Cut up a couple of chicken breasts, a few carrots, a few potatoes – put in a roasting pan, then top with 1/3 c. olive oil and a packet of dry onion soup mix.  Bake 45 minutes at 425.

Wednesday: Happy 15th to my youngest! She opts for Papa John’s pizza — maybe one of their cookies or “brookies” for dessert?

Thursday: pancakes and applesauce for dinner! Yum!

Friday: Turkey and Zucchini Enchiladas — I may make a double batch and freeze some.

So, what was new in your world this week? Any new recipes?

  1. Saturday I went to an Open House day at Schneider Nursery near Seymour. It is a fantastic nursery with a super caring staff! It’s all local. They had programs all day. I went to Blake Hackman’s Cooking with Herbs. He prepared food and gave us samples. He added mint to fresh strawberries. He also prepared bowtie pasta. To that he added olive oil and pesto. He did not give out recipes. I am going to try to get his recipe for that one. I work by his brother in law.. Blake said he ate lots of the pasta dish last summer and lost 20-30 pounds. That’s a hook right there. I also went to a program on filling pots with plants and a third on making a Fairy/Gnome garden. I won a door prize. It was a fun experience. A plant they say they sell out of every year is Whooper Begonias. They raved about them. They were 6.99 for a tray of 4. I am going to buy some but I feared Sat. was too early to get them due to possible frost.

  2. The enchiladas sound great! Nothing new this week–M wants Buffalo Chicken for her birthday so I’ll make that. The rest were tried/true–Cincy Chilli, S/S Meatballs and Tacos. Nothing exciting to me lol–like ’em all but we’ve had them sooooooooo often.

  3. Drove by The Oasis, a small diner-type restaurant in Plainfield, Indiana, and couldn’t believe the HUGE crowd of people outside, police cars, stopped traffic….only to find out a couple of minutes later that TED CRUZ was there on his campaign trail! I didn’t see him….actually I didn’t even look because I had no idea what was going on, but I am proud to say I was probably within 50 feet of a presidential candidate!

  4. You could not have gotten a better picture of you standing next to Heidi Cruz! You really lucked out on that one!! Happy Birthday to Sophie on Wednesday! That 15 years went fast!! Your food ideas are all good, but The turkey tacos caught my eye along with Chocolate scones for dessert any day any time. 🙂

  5. I’d love your baked chicken. Nothing very exciting on the schedule for this week.
