Menu Plan Monday 4/11/2016

Happy menu plan Monday to all of you out there! This past week was our spring break, but unfortunately it wasn’t very spring-like. We had snow a few times, and lows in the 20s. Here’s hoping to a big improvement SOON! I was envious of my many piano families who were in Florida or other warm places. As it was, daughter #3 had all her wisdom teeth (plus one more) taken out, and we visited daughter #1 at IU and then spent a day at my parents’. So, we were plenty busy during the week.

Today, it’s back to the grind. But, just for a few weeks. I have just six more weeks of piano lessons this session, and 6.5 weeks of school for the girls (less for the college girl). Those will go fast —

Here’s the week’s menu plan:

Monday: Tater Tot Taco Bake — new recipes, sounds good

I may make lemon bars for dessert, using a new product I’ll be telling you about soon. Stay tuned!

Tuesday: Make your own pizza — I make the dough and each person makes a personal pizza with their toppings of choice

Wednesday: tortellini — I bought tortellini while on an Aldi’s shopping trip this week. Aldi’s is kind of like Trader Joe’s to me — a “fun” store that I shop at sometimes when I’m on the road. I’ll probably have pasta sauce with the tortellini, and some kind of vegetable

Thursday: Calico Beans — good meatless entree

Friday: Fig and Goat Cheese Stuffed Chicken Breasts another new recipe, using one of the products I’ll be telling you about soon …

  1. I had never compared Trader Joe’s and Aldis, mentally but it is an interesting thought. I think it is a fact that the owners are of the same family. So it makes sense! What will I be eating this week? My ice box is overflowing with – drum roll!! – leftovers!! That makes for quick meals thanks to owning a microwave. Glad last week included a homerun : )

  2. Nothing new here, but I did get busy and make strawberry shortcake and good homemade mac n cheese casserole. I’m loving the sound of your fig and goat cheese chicken dish on the menu for Friday! Can’t wait to hear how that turns out and if you will ever make it again. Let me know so I can try it,
    too, as long as it is recommended by Susan. 🙂

  3. Ooh! I didn’t see this Monday, due to a little “jet lag.” I was in Denver last week where it averaged 65 degrees – sorry you had to endure more of winter here. But the temperatures look promising from here on out! The stuffed chicken breasts sound amazing, and I would love to see the recipe.
