Cheesy Tater Tot casserole crockpot


Welcome to a spring-like Menu Plan Monday! Yes, it’s still February, but just barely. Being leap year, this is our “bonus” February day. Here, it’s in the mid 60s today and I am loving it. I played for a violinist at state ISSMA contest yesterday and we didn’t even need our coats. I am ready for spring — how about you?

This week is looking relatively quiet, and I like that. Here is the menu plan:

Monday: Make your own pizza — I make homemade dough for crusts; everyone adds their own toppings of choice. Lately, I like basil pesto sauce and then I throw on some veggies like onions, peppers — whatever I have. A little cheese, and it is delicious.

Tuesday: Wendy’s Chili — yes, winter’s on its way out, but we can always take one more batch of chili. Plus, Tues-Wed-Thurs are my busiest piano days, and soup is an easy dinner to have ready on the stove. This recipe really does taste pretty similar to Wendy’s chili.

Wednesday: Cheesy Tater Tot Casserole — in the crockpot. Easy and delicious.

Thursday: fish night. Trying to do this once a week. Probably veggies and some type of potatoes too.

Friday: Quesadillas — I plan to use this recipe as a basis (it looks so good). We don’t do steak here, so I won’t use that — I’ll see what I can come up with.

  1. I aimed to do some cooking over the weekend but that never happened so it’s kinda slim picking in my ice box right now. I’m good at making do so it’s all good! Happy Leap Year Day! It’s Martha Floyd’s birthday!

  2. Your week sounds easier than most, except for all of those piano lessons! Think of it as a great service to young people in your neighborhood. Feel the altruism of it all! 🙂
    The selection of meals will please your family but not be too difficult to make.

  3. The weather is pretty nice here too. We’ve had a few days that were perfect for grilling. I’m all about grilled asparagus lately.

  4. Well, we’re being told that our March is going to come in like a lion. Another fairly major snowstorm predicted to start tomorrow. At this point, I have no idea what I’ll have to eat this week. But I’ll find something.
