Happy February Menu Plan Monday! It’s been a good, rather quiet week here. I was able to fit lunches with a few friends in among my piano students. Today, I’m planning to bake cupcakes for the piano kids as Valentine’s gifts. I bought a kit with penguin cupcake toppers to (hopefully) make them look a bit zippier than regular cupcakes. I’ll try to post a picture of the finished product, although baking picture-perfect things has never been my specialty. Still, it’s the thought that counts. Are you making any fun Valentine treats this year?

I also realized that Lent begins this week — I’m playing for some of the Lent services at church, starting this Wednesday night. Easter is early this year.

Here’s the menu plan for the week:

Monday: Skillet Lasagna — tastes almost exactly like “regular” lasagna, but so much quicker and easier …

Tuesday: Oven Roasted Chicken and Veggies —
Cut up a couple of chicken breasts, a few carrots, a few potatoes – put in a roasting pan, then top with 1/3 c. olive oil and a packet of dry onion soup mix.  Bake 45 minutes at 425.

Wednesday: Cheesy Tater Tot Casserole — an easy favorite (uses the crockpot)

Thursday: Pizza Beans — a friend posted this on Facebook, and it looks good. We eat lots of beans here anyway, and this looked like a little different twist.

Friday: Southwestern Turkey Meatloaf — a favorite of daughter #3 (see photo at top of post)

  1. Saturday I used up the remaining potato crop from the garden in fried potatoes. I made a large skillet full. Actually I did not have enough to fill it, so I supplemented my garden spuds with some I bought at the grocery. I also made slaw. I have some leftover Unbelievable Chicken, too so I am set for eating this week! This will be a fun week for me as I will be slowly mailing my homemade valentines – starting with ones that have the farthest journey. Love isn’t love ’til you give it away!
