Menu Plan Monday 1/25/2016

I am happy to let you know that we’ve reached the final Monday in January. We are conquering winter, one week at a time — at least, that’s how I feel. And while I feel bad for those on the East Coast dealing with all that snow, it’s pretty nice to look out the window here and realize that we got none. None, I say! There are several birds on my new bird feeder. Life is good.

This is the week leading up to ISSMA instrumental contest here. For years, my girls have participated, and I have played piano for many kids’ solos. This year, I’m a little sad that none of my kids are participating. And, I only have four kids I’m accompanying. It just feels a bit … empty. Oh well, sometimes kids call at the last minute. This year, I’ll actually be able to help them out if that happens.

So, this week that I was anticipating being so busy, isn’t quite so much. Here is the menu plan:

Monday: Sweet and Sour Chicken, with rice made in the rice cooker. Do you have a rice cooker? I got one a few years ago as a gift, and although at the time I was not happy having another gadget to store (well, I’m still not happy about that part …), it does come in handy.

Tuesday: heated-up pizza. Daughter #3 went to an event with a friend Saturday, and brought home 2 untouched whole pizzas. I am taking this as a little gift from God — no need to cook dinner on my busiest piano day 🙂

Wednesday: Pasta e Fagioli Soup in the crockpot — don’t think I’ve tried it, but it looks good.

Thursday: Chicken Pot Pie (one of my favorites)

Friday: Chicken Noodle Soup — no real recipe, just chicken, carrots, broth, peas, seasoning. My sister-in-law gave me the idea of making spaetzle instead of noodles, so I treated myself to this Spaetzle Maker. Have you ever made spaetzle? Any advice? I’ll let you know how it goes.

  1. Tell me about spaetzles. If I ever heard the word, I don’t remember it. I had guests Saturday night. From that meal, I have several leftovers and for me, that is a strong positive. I will drive to Columbus East this Saturday to accompany students on their solos. Between playing for the kids, I ALWAYS have my quilting along. I am so thankful that the weather sounds springlike! After contest I shop and eat in Columbus, so I make it a fun day.

  2. Great minds think a like this week only its Sweet and Sour Pork here! And I’ll likely make a Chicago style deep-dish pepperoni pizza since there’s spaghetti sauce left over. Ha! I gave away one of those Spatzle makers years ago.Have a great week!

  3. I just had Pasta e Fagioli at Olive Garden on Saturday. It was delicious. Not sure I could get my guys to try it. It’s a tomato thing. Haven’t tried the spätzle in soup yet, please follow up on how it works out.
