Menu Plan Monday 1/11/2016


Welcome to what feels like a very wintry Menu Plan Monday! We got an inch or two of snow yesterday, plus wind, ice, and falling temperatures that brought an abrupt end to a long mild stretch. I was glad that my oldest daughter, who returned to college Saturday after Christmas break, got some snow there too, since she had wanted some.

With my 17 piano students, and this month adding in students I accompany at solo/ensemble contest 1/31, dinner hours are busy. Especially on Tuesday, Wednesday, and Thursday, I’m not free to work on food prep until 5:30 or 6. So, I’m trying on those nights to either use the crockpot, or things I can prep early, or things that are just really quick and easy to make. Any suggestions welcome!

Here’s the menu plan for this week:

Monday: Mexican Tamale Pies — I “pinned” these and honestly can’t remember if I’ve made them or not.

Tuesday: BBQ Ranch Chicken Casserole — I’ve made (and loved) this a few times.

Wednesday: Crockpot Chicken and Dumplings — another recipe I’ve pinned that looks good, quick, and easy.

Thursday:  Wendy’s Chili — this seems like a good week for chili.

Friday: Chicken, Spinach, and Cannellini Bean Quesadillas — made before; really tasty (pictured at the top of the post). They’re also really easy to individualize for the resident vegetarian, etc.

  1. Here I sit in my flannel pjs on our first snowday of this school year. I am thinking for lunch I may make fried potatoes to go along with the second batch of spinach salad and some ham.
    I stopped on my way home from church, yesterday, to get my mail. My mailbox was solidly frozen shut so so much for that. Imagine being a mailman today!!

  2. I have to do most of our meals on Sunday–fully cooked or prep. I get home too late to cook any but the simplest meals. Sounds like it would help you for a few weeks! Text me if I can offer suggestions on what to make early. Good luck with solo/ensemble. I always chickened out at the last minute! lol

  3. This looks like a good plan for the week. I am working on more planning ahead so that I don’t stand in the kitchen at 5 wondering what to make. Today is leftover night!

  4. I got the ingredients for taco soup, so I’m going to be making that this week. I also got fresh green beans, which I’ll fix with ham and onion. Yum! Yum!

  5. Everything looks delicious! Yesterday I made meatloaf, scalloped potatoes and apple crisp in the oven at the same time. Smelled great as it was baking and tasted pretty good, too.

  6. This is a great menu! We got snow this week as well, and are expecting rain over the next few days. My menu is chicken noodle soup for two days, because I made a huge batch and my family loves it that much; steak and potatoes; tortellini soup, Thursday – crockpot chicken and Friday – chili. By Saturday we do choose what you like leftovers!
