Welcome to 2016 — hard to believe, I know. I hope you had a nice New Year’s celebration. Here, we made peanut butter cup cookies and enjoyed the SyFy Channel’s Twilight Zone marathon. I had a few errands here and there, but overall it’s been nice to have a quiet few weeks with no school for the kids, oldest daughter home from college, and no piano students for me.

Today, I go back to “normal,” and tomorrow the younger girls do as well, with their school starting (we still get oldest daughter for another week). We celebrated the new season of Downton Abbey last night with oldest daughter making delicious scones (which disappeared long before DA began). Loverly, absolutely loverly!

Here is the menu plan for the week:

Monday: Pasta Alla Genovese: Basically, it’s pasta mixed with French-cut green beans and basil pesto sauce. Very tasty, and a favorite of vegetarian daughter #2.

Tuesday: Oven Roasted Chicken and Veggies —
Cut up a couple of chicken breasts, a few carrots, a few potatoes – put in a roasting pan, then top with 1/3 c. olive oil and a packet of dry onion soup mix.  Bake 45 minutes at 425.

Wednesday: fish night — I try to serve fish most weeks. I just bought several boxes of Gorton’s on sale at Kroger — maybe mashed potatoes too?

Thursday: Easy Chicken and Cheese Enchiladas — using homemade cream soups (shown in top photo).

 

Friday: Curried Lentil and Chickpea Stew — sounds good on a cold day.

  1. Sorry we missed out on the oven roasted chicken breasts and veggies last night. I would certainly have enjoyed it, but it was quite late when we got back as it was, so it’s a good thing we went on.

  2. You have motivated me to get more organized about my meal planning. Today I actually planned three meals for this week. Since it’s only my husband and me, we always have leftovers, so I will get more than three meals out of my planning!! He doesn’t mind eating leftovers since I always try to toss something freshly made on the table also. Thanks for the motivation.

  3. Have you used any of the zucchini I sent back with you recently? In recent weeks, every main meal I eat contains some leftovers from previous cooking. If I didn’t eat leftovers I’d be up a stream with no paddle!
