Menu Plan Monday 11/16/2015

Happy Monday, to all of you! I hope it’s been a good week where you live. My middle daughter was inducted into National Honor Society at her school, and my youngest daughter’s band completed its marching season (finally), with a 12th place finish at Bands of America Grand Nationals, featuring bands from all over the country (there was even a band from Hawaii … imagine transporting all that stuff across the Pacific!).

This week, things are feeling more fall-like. It’s getting colder and windier. Ah well, I guess it had to happen eventually. And next week we’ll have Thanksgiving. Time does fly!

I’ll have a bit more meal prep time now, without the band pickups. That is nice. Here is my plan for the week:

Monday: Lasagna Soup — maybe bread sticks too, if I can get them made …

Tuesday: Skinny Crockpot Santa Fe Chicken

Wednesday: Wendy’s Chili — left from last week

Thursday: Three Cheese Baked Ziti — in my homemade “favorites” cookbook, but I haven’t made it in ages:

Mix 16 oz. cooked ziti and 28 oz. tomato sauce

Mix 15 oz. ricotta, 2 eggs, and 1/4 c. Parmesan.

In 9 x 13 pan, spoon 1/2 of pasta, top with cheese mixture, then rest of pasta.

Sprinkle with 1 c. mozzarella.

Bake 30 min., covered, at 350 degrees.

Friday: Southwestern Turkey Meatloaf — a favorite of daughter #3

  1. I should have cooked something up this past weekend but I lazied instead. I may hit a Schwan bag when I get home from school today and warm it up. I am proud of Isabel and Sophie!
