Welcome to the last partial week of summer and the first of fall! What is your favorite season? When I was younger, I would have said fall. Lately, though, I am preferring spring. However, I’m grateful to live in a place that experiences all four seasons. Each has its good points. Fall arrives Wednesday. I am bringing out fall decor for the house. I don’t do a lot of decorating, but I mainly put things out in the foyer. That is the room where my piano students come each week, and they enjoy seeing the changing holiday things. It’s always fun to see things through children’s eyes πŸ™‚

Here is the menu plan for the week:

Monday: Lentil Loaf β€” good meatless entree.

Tuesday: Tater Tot Casserole β€” from the Duggar family’s recipes. I change it some β€” only make 1/2 the recipe, use skim milk instead of evaporated, and much less meat. And add veggies as side dishes.

TORTILLA SOUP (one of the easiest and most-enjoyed items I make)

16 oz. refried beans

14.5 oz. chicken broth

5 oz. chunk chicken (I usually just cook 1 chicken breast)

15.5 oz. black beans, rinsed

3/4 cup salsa

Combine all ingredients.Β  Bring to a boil, then reduce heat and simmer 10 min.

Crumble a few tortilla chips in the bottom of each bowl.

Ladle soup over chips and sprinkle with cheddar cheese.

Thursday: Chicken Parmesan

1 jar marinara sauce

4 chicken breast halves

2/3 c. shredded mozzarella

1/4 c. bread crumbs

2 T. olive oil


Pour marinara sauce in bottom of ungreased 12 x 8 dish.

Place chicken over sauce.

In small bowl, mix cheeses, bread crumbs and oil. Sprinkle evenly over chicken.

Bake at 350 30-35 min.

Serve over noodles.

Friday: Wendy’s Chili and baked potatoes. Football game night — which means I’ll be there to watch the band perform πŸ™‚

I still have apples from the neighbors, so I’ll probably make an apple pie some night as well.

  1. I just packed my lunch. It consists of half a green pepper slice and 2 tomatoes. I chopped basil from outside my garage door, and added honey mustard dressing, dill weed, and salt & pepper. On the side I will enjoy Whole Wheat Wheat Thins with cheese & iced tea. We don’t have lunch this year until 12:30 (late lunch). After eating my marvelous oatmeal around 5:30 a.m., I honestly am not that hungry at 12:30. That’s how filling my oatmeal really is!
