Menu Plan Monday 9-7-2015

Happy Labor Day, everyone! I’m not totally sure what we’re celebrating — unions? People who work? Well, I’m no fan of unions, but I can’t help but get behind hard work. So hopefully everyone can enjoy the day and take a little break from your labors 🙂

It is so hot here. I see that Sunday, they’re showing we reached 100 degrees. That is very unusual for September! I feel bad for my daughter who has marching band practice outside each day. Thankfully, it looks like things should improve quite a bit here beginning Wednesday.

Here is my menu plan for the week:

Monday: one of the girls wanted my husband to grill. He has done this maybe 3 times. So hopefully that will go well …

Tuesday: frozen pizza. I am sure I am not inspiring anybody yet. But, I have 6 piano students this day, plus one daughter begins dance class and needs to be transported, so it’s a really busy day.

Wednesday: Tuscan Tomato Zuppa —

2 14.5 oz. cans beef broth

18 oz. tomato juice

3 14.5 oz cans tomatoes

10 oz. frozen chopped spinach

9 oz package cheese tortellini

2 garlic cloves, chopped

1/2 tsp pepper

 

Combine all — cook 1 hour to combine flavors. Sprinkle with Parmesan cheese before serving.

Thursday: Fiesta Chili Bake — I have made this for years and we like it — got the recipe from a Del Monte tomato label.

Friday: Pasta Alla Genovese: torn from a magazine a few months back. I can’t find it online, but basically, it’s pasta mixed with French-cut green beans and basil pesto sauce. Very tasty, and a favorite of vegan daughter #2.

  1. I purchased 3 herbs this spring but for me, it’s not been a summer to use them hardly ever. I did use rosemary over the weekend but alas, it is not doing well. It is nearly brittle. I have pretty much basil but have barely cut any. It’s been such a strange summer with the garden, between all the rain and my neighbor’s knee surgery.
    Happy Labor Day! I plan to . . . work on housecleaning my family room. I hope to treat myself by doing one 12 x 12 scrapbook page of me in 1943. The main things that will take time are cutting out my slice of birthday cake and candles and some flowers to resemble flowers I am holding in a photograph. But first, I am embarking on my walk. Yesterday my walking involved strolling around Indiana University in blistering afternoon heat!

  2. I’m concerned about the lack of protein in the pasta alla genovese. What are you doing to get protein in that? With two growing girls, one of whom is expending enormous energy in marching band, I’m concerned. And the other is probably expending lots of energy in dance.
