Welcome to the back-to-school edition of Menu Plan Monday! Honestly, the menus this week aren’t anything out of the ordinary. They’re taking a backseat to all the activity involved with the beginning of a new school year. I take my oldest three hours away to begin college on Friday. I’ve been busy teaching the 16-year-old to drive, and while she’s doing fine, I don’t think there’s a scarier job on the planet than getting into a vehicle with a teen who’s never driven before. The youngest finished three weeks of band camp, and has a darker tan than ever before in her life. The two younger girls begin school Wednesday.
So, what’s for dinner this week?
Monday: Cheesy Tater Tot Casserole — easy, and a family favorite. Uses the crock pot!
Tuesday: Make Your Own Pizza — I make pizza dough; each person puts their own choices of toppings onto their personal pizza.
Wednesday: Sweet and Sour Chicken. Since it’s the first day of school for the younger two, I’ll have some special treat for them as well. I used to make creative treats, such as these. But as kids reach high school age, they’re not so much into “cute” as they are delicious. So it may be a pan of brownies … but it might just be these.
Thursday: Football Fiesta Casserole — one of my oldest daughter’s favorites
Friday: Off to college — not sure what I’ll be eating, but I won’t be cooking …
