Hello friends, and welcome to a mid-summer edition of Menu Plan Monday. We are just back from vacation, and I have to say it was really nice to have an entire week with no cooking! That may be one of my favorite parts of any vacation.
But now we are back to reality with a bang. 4-H projects need to be completed, and the non-perishables are judged Tuesday, then food products are judged Wednesday. We still have quite a ways to go with several projects in the next day or two. Cooking will be squeezed in there somewhere …
Monday: Chicken Parmesan – requested by daughter #3
1 jar marinara sauce
4 chicken breast halves
2/3 c. shredded mozzarella
1/4 c. bread crumbs
2 T. olive oil
Pour marinara sauce in bottom of ungreased 12 x 8 dish.
Place chicken over sauce.
In small bowl, mix cheeses, bread crumbs and oil. Sprinkle evenly over chicken.
Bake at 350 30-35 min.
Serve over noodles.
Tuesday: the annual, long-awaited Chick-fil-A Cow Appreciation Day. If you live in town with a Chick-fil-A, this is such a fun activity. Dress like a cow, and you get a free meal anytime that day. If you’re embarrassed and only put on a mask or wear a tail, you get a free entree. If you go whole-hog, (whole-cow), you get a whole meal. Our family has done this for years. Don’t feel like you’ll feel dumb walking into the restaurant in cow attire (we basically wear black or white and cover ourselves with paper spots of the other color). The restaurant is full of others doing the same thing! Chick-fil-A is such a great company that I love supporting them in this way.
Wednesday: Pasta Alla Genovese: torn from a magazine a few months back. I can’t find it online, but basically, it’s pasta mixed with French-cut green beans and basil pesto sauce. Very tasty, and a favorite of vegan daughter #2.
Thursday: Philly Cheesesteak Stuffed Peppers – I saw these on Facebook this week and thought they looked so good! The problem is that I’m not sure the rest of the family will eat green peppers. Hmmm … maybe I can make them as-is for me and adjust for others??
Friday: Lentil Loaf — good meatless entree. Can you tell vegan daughter was in the kitchen when I was asking for menu ideas?
