Happy summer to all you readers! It officially began yesterday, June 21, although it has seemed like summer for a while. This is a busy week here, with the two younger girls finishing up summer gym classes (Yay! Now I think all my girls are finished with gym class forever!), and the oldest heading to her college with me for two days for registration. This will be a new, but hopefully fun, experience.
So, I’ll have a short week of cooking. Here goes our menu plan Monday:
Monday: Skillet Lasagna –– this is so much easier than “regular” lasagna that it has pretty much replaced it for me. Probably bread machine French bread, too (I did get a replacement bread machine at the church garage sale over the weekend for $5, so I am less nervous about the fact that our current one is leaking oil). The church sale netted $20,000, for the local Rescue Mission and Hope Center. Yes, we sold a lot of stuff!
Tuesday: fish of some type — I have some frozen, breaded filets, so it will probably be that. Maybe also potatoes and green beans.
Wednesday – Thursday: gone to college 🙂
Friday: Calico Beans — good meatless entree
There’s rhubarb in the garden, so I may make a strawberry rhubarb pie. Yum!
