Menu Plan Monday 6-15-2015

So here we are, already at the halfway point of June. Hard to believe! With graduation behind us, dare I say this might be a somewhat quiet week? Not really, with summer gym each weekday morning for two of the girls, and 7 piano students arriving one day. The girls and I are also helping with our church’s garage sale. We go to a large church, and you would not believe how much stuff the gym is packed with each year. Last year, I think we raised $13,000 at it. It always goes to a good cause as well — this year, proceeds will be divided between the local Rescue Mission and the Hope Center (for crisis pregnancies).

But, the subject at hand is Menu Plan Monday. So, here goes:

Monday: Cheeseburger and Fries Pie — so good.

Tuesday: CrockPot Enchiladas — thanks to online pal Lisa for the inspiration. Like her, I’ll be making these meatless, subbing zucchini for beef. Several times lately I’ve gotten large bags of zucchini marked down for quick sale at the grocery for cheap. Shred them, freeze them, and we go through them like crazy for zucchini bread (or for a recipe like this).

Wednesday: Baked Cream Cheese Spaghetti Casserole — easy and good.

Thursday: CrockPot Cashew Chicken

Friday: Lentil Loaf — good meatless entree.

(Note that what I’m showing you here is lentil soup — but you get the idea 🙂

Most of these will include a vegetable on the side as well, and maybe a loaf of bread from the bread machine. Speaking of which — our bread machine has been leaking oil. I think I’ll see if I can find another at the church sale …

  2. Yum to it all! I think I’ll do the cream cheese spaghetti since the kids find t eat the store-bought sauce I got the last week. All of it sounds great!!
