So after all the anticipation, graduation 2015 is history. Congrats to all the Homestead grads!
Our open house went well, and I’ll share more about the details in the week to come. I know that many online resources helped me as I planned it, so maybe some of my ideas can help someone else. My mom is staying some this week to help the girls on 4-H projects — nice!
Actually, it would be nice now to have a break from cooking for a while. But since people just keep getting hungry (!), I guess Menu Plan Monday will continue …
Monday: Chicken Pot Pie — one of my favorites
Tuesday: fish night — some type of fish, some type of vegetable … healthiness … 🙂
Wednesday: Chicken Parmesan – an easy family favorite
1 jar marinara sauce
4 chicken breast halves
2/3 c. shredded mozzarella
1/4 c. bread crumbs
2 T. olive oil
Pour marinara sauce in bottom of ungreased 12 x 8 dish.
Place chicken over sauce.
In small bowl, mix cheeses, bread crumbs and oil. Sprinkle evenly over chicken.
Bake at 350 30-35 min.
Serve over noodles.
Thursday: Taco chicken (from GFS, left over from graduation open house) with mashed potatoes and brussels sprouts
Friday: I am tired — frozen pizza
