Menu Plan Monday 6-1-2015

Welcome to June and Menu Plan Monday!

It is a busy week  here with my oldest daughter graduating from high school Saturday. Then, we have an open house that afternoon. Here is the plan for that:

Walking Tacos

Grad Hat Cookies/Candy

Vanilla Cupcakes with Fresh Vanilla Buttercream

Peanut Butter Stuffed Brownie Cupcakes with Peanut Butter Buttercream

So, much of my week will be busy getting all that food ready, in addition to cleaning the house and decorating a bit (more posts on that later).

BUT, the rest of the family still needs to eat this week. It will be a different kind of week, with the oldest now out of school and the younger two going to summer gym all morning. I’m also speaking at various sessions at a local elementary school’s author day most of the day on Tuesday. Ack! So, here is the menu plan:

Monday: Wendy’s Chili — as I write this, on Sunday, it is just 50 degrees and cold!

Tuesday: Oven Roasted Chicken and Veggies — so easy; I make this a lot.
Cut up a couple of chicken breasts, a couple of carrots, a couple of potatoes – put in a roasting pan, then top with 1/3 c. olive oil and a packet (actually I use 1/2 packet) of dry onion soup mix.  Bake 45 minutes at 450.

Wednesday: Taco Spaghetti — new recipe; looks good.

Thursday: Mexican Tamale Pies – another new recipe; looks good.

Friday: fish night — probably salmon filets cooked in a skillet, along with a vegetable of some type.

Now that we’re into the unofficial summer season, a word about the blog’s summer schedule — I’ll still plan to write my Menu Plan Monday posts, and probably a Friday post (either Childhood Memories Friday or Little Tales). The rest of the week I may or may not post, and some of those days I’ll probably reprieve a post from the past (there are several to choose from, since I’ve been at this since November 2008).

  1. This sounds like an exciting week in the life of you and your family!
    Yesterday I tried something new. I went to the garden and gathered a handful of kale/spinach (combined), washed it and put in my food processor. To that I added 13 ice cubes, 1 banana, 1/2 c. apple juice & 1 T. peanut butter. I turned on the food processor and let it whirl until it was like a milk shake – kinda. Then I drank it for my lunch. It has to be healthy and it was also tasty. Try one!

  3. The PB Brownie things sound SUPER!! I’m planning to do the Mexican Tamale Pies Wednesday if anyone is home. If not it’ll be after my conference.
