May’s first Menu Plan Monday has arrived! I hope you are enjoying great weather where you live. It is nice here, with trees and flowers in full bloom. Prettiest time of the year.
May is always one of the busiest months here, so excuse the quick-and-easy recipes. Then again, I figure if I’m busy, many of you must be as well.
You could make Prince William’s favorite entree, Cottage Pie — in honor of the new royal princess!
Here is my plan:
Monday: Roast Chicken and Veggies – a favorite, and I’ve made it so many times I could probably prepare it blindfolded:
Cut up a couple of chicken breasts, a couple of carrots, a couple of potatoes – put in a roasting pan, then top with 1/3 c. olive oil and a packet (actually I use 1/2 packet) of dry onion soup mix. Bake 45 minutes at 425.
Tuesday: fish, some of the boxed variety and some of the baked. I try to add fish to the menu each week, although I’m not always successful at that. Also mashed potatoes.
Wednesday: Lasagna Soup — maybe bread sticks too, if I can get them made …
Thursday: Sweet and Sour Chicken with rice
Friday: Celebrating daughter #2’s 16th birthday at the local vegan spot, Loving Cafe.
Need dessert ideas? The Jessa (Duggar) Seewald brownies made last week were a hit (and not Duggar-sized; a few of us finished them off in 15 minutes).
Chocolate Peanut Butter Fudge Cake, made last week for daughter #3’s birthday, was delicious as well.
