Menu Plan Monday time again! Here in the Midwest, at least, it is starting to feel like fall (I guess that makes sense, since today is officially the first day of autumn). Still, it seems like it’s too soon to begin the descent to winter again, especially after last year’s weather. Let’s hope for a mild one, although some snow for Christmas is always nice.
Here’s the week’s plan:
Monday: Chicken Pot Pie — a favorite, in any season.
Tuesday: Two Bean Chili — new recipe, because, why make one-bean chili? My husband actually found this recipe and wanted it made. I’ve never used bulger before — has anyone out there? I have couscous and quinoa in the pantry and may use those instead …
Wednesday: Fish — I’d like to say I’m baking this, but actually last week Meijer featured a sale on boxes of VanKamp’s fish filets, so that’s it. I will make some kind of vegetable too.
Thursday: Baked Potato Soup — left over from last week. It was a good recipe — nice and hearty.
Friday: Stacked Burrito Pie — made it before; delicious.
Still hope to get Easiest Pineapple Cake made this week, as well.
