Menu Plan Monday

menuplanmondayIt’s Menu Plan Monday again. This is the first full week of school here, and my piano lessons season starts too. My schedule with lessons this year has 3 days of the week where I finish after 5. This makes it a real challenge for me to get dinner on the table around 6:00. But, at least this week, I am prepared (I think). I’ve been collecting crockpot recipes on Pinterest, and I’m trying several this week. I know that I may not be up for using the crockpot three days each week all school year, but for now … here goes. Actually, this just involves doing dinner prep earlier in the afternoon instead of later, I guess.

Monday: Asian Chicken Sandwiches — new crockpot recipe — VERDICT: didn’t think they were too great. Not keeping this one.

Tuesday: Easy Cheesy Spaghetti Casserole – leftover from last week.

Wednesday: Vegan Crockpot White Chili — I may add some chicken for the non-vegetarians in the group. Maybe bread in the bread machine too.

Thursday: Crockpot Santa Fe Chicken — yet another new crockpot recipe.

Friday: Beef and Bean Taco Casserole — no crockpot! I may actually be in the kitchen at a normal time.

  1. I see no problem with using the crockpot 3 days each week. As you say, it just means you do your cooking earlier and that sounds like the perfect plan for your situation. For me this week, I am glad I have six more salmon patties awaiting me in the ice box. I’ll combine that with green beans and slaw & tomatoes – all from the garden!

I work late 3 days a week lately so I am trying to do soup/sandwiches/salads one of those nights (prep at lunchtime what I can), crock pot one night and either a make ahead meal (casserole, etc) or something I can keep warm in crock pot and do all prep at lunch time (ziti, sloppy Joes, taco meat, enchiladas). Makes it so much easier than getting into the kitchen late and scrambling!

  3. The crockpot is a lifesaver for those busy days & nights, so no shame from from me. I’ll have to try the Asian Chicken Sandwiches – looks yummy!

  4. Waiting to hear how the crock-pot one go over. Back when I taught much more often at night I used the crock-pot relentlessly! I also did as much prep and cooking on Sundays as possible. I tried “Freezer Cooking” but we didn’t always like the texture so I pre-cooked for the week and just heated it–much better results.

  5. Your meals sound like they would be good. I still have some meatballs in marinara sauce left over. I may also fix some tuna patties. I haven’t had fish lately and need to eat some. I’m not a fan of salmon, but do like tuna patties.
