Menu Plan Monday

menuplanmondayMenu Plan Monday arrives again. What is going on in your corner of the world this August morning? Here in Indiana, it is hot, band camp is in full swing, and we have a little over a week before school begins. There are still museums to visit and the state fair to see as well. Soon …

Monday: tacos — requested by daughter #3. I will probably cook chicken with taco seasoning and add cheese and corn chips. Then we can put that in taco shells, along with other toppings.

Tuesday: Tomato and Corn Pie — I’ve made this before and it’s really good. It’s also a great recipe for using corn and tomatoes from the garden, if you are fortunate enough to have them.

tomato and corn pieWednesday: frozen pizza — museum day and getting home late = easy dinner

Thursday: Cheesy Tater Tot Casserole – family favorite and good for busy days since it’s made in the slow cooker

Friday: pancakes for dinner (again) — tried it last week and loved it 🙂 I used this oatmeal pancake recipe, which was good. We had syrup, and also cherry pie filling as toppings. Also applesauce (sorry, no bacon — we’re not bacon eaters here :))

Also, this for dessert some day this week — tell me it doesn’t look totally delicious??

  1. I cooked a full meal last night for four friends who happen to be widows. I wanted it to be an encouraging evening for all of us. I believe I hit the nail on the head as everyone left smiling. Remember, the smallest kindness ACTED UPON beats the best good intentions by a country mile!
