Menu Plan Monday

menuplanmondaySchool is now out, so it’s unofficially summer! In the garden, my strawberries are looking alive but not really producing. Not sure I’ll get more than a quart total this season 🙁 I don’t know if the problem was the severe winter taking its toll on them, or whether these just aren’t great plants (I bought them at Meijer, whereas my previous patch I mail-ordered plants). The hard thing with strawberries is that they take a full year to produce, so one must be patient. Hopefully next year will be better, because I do love strawberries, and they take up probably half my garden. Everything else in the garden looks good, although nothing (other than rhubarb and a bit of lettuce) is ready for harvest yet.

Here’s the week’s menu plan:

Monday: Fun night — I get to meet with Lisa of Hopewell, who is in town for a work conference, for dinner at a local Indian restaurant. Daughter #3 is cooking at home, so that should be a treat for those remaining there 🙂

Tuesday: Cheese-Stuffed Breadsticks. Delicious! Probably a veggie or two as well.

Wednesday:   Cheddar Chicken Spaghetti — this is a good recipe to double and freeze. I’m just passing that info along — I don’t have room in my freezer now for a second one!

Thursday: Fiesta Chili Bake — I have made this for years and we like it — got the recipe from a Del Monte tomato label. Fun fact: I’m still using last year’s garden tomatoes from the freezer.

Friday: Pizza Pie Bake a Bisquick recipe from years ago. We’ll see if people still enjoy it …

  1. I tried a recipe I saw Jill making. I put a maybe 3 pound bag of chicken breasts in my greased crock pot. I cut each piece in half and removed the fat. I added a taco seasoning packet and about a pint of homemade salsa. I turned the crock pot on low and left it all Saturday night. Sunday morning the chicken was falling to pieces. It’s very good. There is more liquid on it than I expected, but I’ll eat every bite.

  2. If I had Bisquick mix, I’d try the last two recipes you listed. They both look good.
