Menu Plan Monday

menuplanmondayMenu Plan Monday again. Although it has been a cool week here, my snap peas have popped up and the tomatoes, peppers, and zucchini I planted are looking good. Strawberries planted last year look good as well, although small. They should produce in about a month, hopefully. Green beans have been planted and are just popping up. Still waiting for the cucumber plants to emerge, and I’ll plant mini gourds on the last day of school — I remember hearing this advice on one of the girls’ kindergarten trips to the pumpkin patch. Do you have a garden? What have you planted?

Monday: Healthy Chicken Quesadillas — found on pinterest, although they’re pretty basic

TuesdayCheeseburger Pie — one of the kids’ favorites

Wednesday One Pot Pomodoro Chicken — another new pinterest find

Thursday: fish, some of the boxed variety and some of the baked. I try to add fish to the menu each week, although I’m not always successful at that. Also mashed potatoes.

Friday: I may not be here that evening, but if I am — probably Sweet and Sour Chicken — I must admit that I’ve been using the Chicken Helper version. It’s actually good.

Some night — Rhubarb Dream Bars with vanilla ice cream. Rhubarb is ready in the garden! Yay!

  4. I hope you are having a happy day. I popped popcorn the entire morning! We have equipment similar to a movie theater. I ate too much and now have the hulls lurking in my teeth.

  6. I’ll bet I would love those rhubarb dream bars. They look delicious. Alas, they feature two cups of sugar — waaaaay more than I can eat.
