Menu Plan Monday

menuplanmondayHoly cow, what a winter! So much snow, so many low temperatures, so much wind … pretty to look out at, but not so nice when you have to drive in it — which is inevitable, living about 7 miles from town.

One bright spot is the birds. They eat so much — I’ve been filling the feeder each day — that there are always some to see when I look out.

song sparrowI’m just beginning to be able to identify birds — I think this one is a song sparrow. Lots of them visit.

dark eyed juncoProbably our most frequent visitor is the dark eyed junco. They are really pretty birds; their tails flash black/white stripes when they fly.

Anyway, this is menu plan Monday, so let’s get to the menu. I hope to pull this off this week. Monday is my shopping day, and it’s looking like a likely day-off-school for the kids, with a high of 5 and more wind. Hopefully the van can get me around to my 4-5 destinations without giving out. It’s also a busy week because Saturday is Indiana State School Music Association’s annual instrumental contest. I’m accompanying 7 kids for their solos, and will be fitting those times in all week in between my 12 piano students.

Monday: Cheesy Tater Tot Casserole — this has become a family favorite. Great for a cold day!

Tuesday: Creamy Cheddar Tomato and Chicken Stew — noted this from this month’s Ladies’ Home Journal; looks good.

Wednesday: Cheeseburger Pie — one of the kids’ favorites. I even make my own Bisquick now. Aren’t you impressed?

Thursday: (Hanging my head in shame): DiGiorno pizza. Okay, I’m not that ashamed — particularly because these do taste good, we don’t eat them too often, and there’s a great deal on them at Target this week. Check it out.

Friday: Chicken Jambalaya: no real recipe; I have a bottle of “One Step Seasonings” in the spice cabinet that’s several years old. I’d like to use it up, and this is the recipe on the label. Basically, grill chicken with 2 T of this seasoning, add a can of tomatoes, and serve over rice.

  2. I saw that same LHJ recipe and also thought it looked good – let me know how it is! The magazine just started showing up a few months ago; I have no idea why. 😕

    And you just reminded me – I haven’t seen Mr. & Mrs. Cardinal in a while – I’m going to have to watch for them. I’ll have to put some sunflower seeds out for them and hope the rotten squirrels don’t get to them first!

  4. The weather in GR is horrendous too. We’ve had 70 inches of snow so far this season. Our average for the whole season is 72 inches. And we’re having snow showers again today. Some counties in this area are ticketing non-essential drivers. Our office is closed, which happens rarely.

    Glad I’m home because I just heard the woman in the apartment next door to me yelling. She had fallen and needed help getting up. Thankfully, I was in my office/den, which is right next to her apartment, so I heard her yelling. Then Snookums heard it too, and she really began barking! The neighbors across the hall, a sweet couple, helped her up off the floor. I’m sure I couldn’t have done it alone.

    I think I’m going to make the cauliflower soup again this afternoon if I can motivate myself. It’s so good! And it will be perfect on a cold afternoon/evening. I have on long underwear, a turtleneck, a sweatshirt, jeans, shoes and socks, and I’m still cold. But spring will come, followed by summer, and then I’ll be too hot!
