Menu Plan Monday

menuplanmondayIt’s Menu Plan Monday again. I was thinking you might be interested in how I choose recipes for each week. Usually, I jot down my menu plan on Sunday. The day or so prior, I take a general accounting of what’s in the refrigerator that needs to be used, and that figures into my plans. I also do a quick look through the pantry and try to dig out anything that’s been lurking in the back for too long. Can I use up an item or two in a dish? Sometimes I also look through my recipes bookmarked online, or my cookbooks. And if I still have blank spots after all that, I might ask any family members sitting nearby what they feel like eating ๐Ÿ™‚ So that’s my method. How do you decide what to cook for the week?

Monday: Tilapia — on sale last week — probably with rice and some kind of vegetable

Tuesday: Curried Chicken and Potato Pie — tore it out of a magazine a while back; looks good.


Wednesday: Leftover Buffet — I found several leftovers that need to be eaten this week, and this is a good night for it — band concert, helping at school, piano lessons, more …

Thursday: Corn and Cheese Enchiladas

Friday: Pan Fried Matcha Chicken, probably with homemade noodles

  1. There are numerous reasons why I fix what I fix. Over the weekend I made a pork loin roast in the 1975 crock pot. I was worried my potatoes in the 2 car garage had frozen so to comfort myself they were OK, I took gobs of the ones a little larger than big marbles – combined them with a quart of my canned green beans, onions, and pork broth. I’ll be eating on that for much of this week, hopefully. Whatever needs to be eaten, I eat it! Waste not – want not – that’s one of the slogans I live by.

I plan meals pretty much the same way, only leftovers, if they haven’t already gone for breakfasts or lunches, generally get repurposed on the weekends, when I either am too busy to want to think about meals, or I’ve got the time to do something creative with last week’s whatever-it-was. ๐Ÿ™‚ Last night, I took some leftover tomato soup, added some chicken stock (made with the carcass of last week’s roast chicken) the remainder of that roast chicken, and some elbow macaroni that had been part of dinner one evening, added a bit of seasoning, and made a very nice tomato-chicken-noodle soup.
