Menu Plan Monday has arrived again! This week’s challenge is that I have about 35 frozen cake rolls in my 2 freezers, leaving very little room for anything else. Items have to be taken out VERY carefully to avoid an avalanche! Hopefully, most of them will be leaving this week. Here’s the plan:
Monday: my dad is coming to take us out to eat for my birthday! It’s always a treat to not have to cook. I plan to go to Penn Station, which is one of my favorite places to eat lately. I know, I know — subs? But they’re really good. The bread is delicious, and the fries are yummy — I just really like the place.
Tuesday: this is my actual birthday, and — get ready for it — I’m planning to make a couple of DiGiorno pizzas from the freezer. 1) I prefer not to cook, and 2) I really would like to clear out some freezer space. For dessert, I will make myself one of my favorite desserts: Chocolate Lover’s Delight. I will share the yumminess with you:
Chocolate Lover’s Delight
Bake a box of brownie mix. Let cool and cut into small pieces.
In a trifle bowl or 9 x 13 dish, layer brownie pieces, a container of Cool Whip, and a prepared box of chocolate pudding. Top with a chopped favorite candy bar.
Wednesday: Back to reality with Creamy Mexican Turkey Soup (although I’ll use chicken) — also bread machine bread.
Thursday: Calico Beans — my husband is always requesting a “bean night.”
