Menu Plan Monday

menuplanmondayMenu Plan Monday has arrived again! This week’s challenge is that I have about 35 frozen cake rolls in my 2 freezers, leaving very little room for anything else. Items have to be taken out VERY carefully to avoid an avalanche! Hopefully, most of them will be leaving this week. Here’s the plan:

Monday: my dad is coming to take us out to eat for my birthday! It’s always a treat to not have to cook. I plan to go to Penn Station, which is one of my favorite places to eat lately. I know, I know — subs? But they’re really good. The bread is delicious, and the fries are yummy — I just really like the place.

Tuesday: this is my actual birthday, and — get ready for it — I’m planning to make a couple of DiGiorno pizzas from the freezer. 1) I prefer not to cook, and 2) I really would like to clear out some freezer space. For dessert, I will make myself one of my favorite desserts: Chocolate Lover’s Delight. I will share the yumminess with you:

Chocolate Lover’s Delight

Bake a box of brownie mix. Let cool and cut into small pieces.

In a trifle bowl or 9 x 13 dish, layer brownie pieces, a container of Cool Whip, and a prepared box of chocolate pudding. Top with a chopped favorite candy bar.

Wednesday: Back to reality with Creamy Mexican Turkey Soup (although I’ll use chicken) — also bread machine bread.

Thursday: Calico Beans β€” my husband is always requesting a β€œbean night.”

calico beansFriday: Fajita Chicken Pasta– new recipe; tore it out of a magazine recently.

  1. I am so happy for you that tonight you get to eat out with your dad & family! Whoop! Whoop!

  2. An afterthought: The photo you displayed with the salt & pepper shaker aside of the bean pot: We got a salad bowl for a wedding present November 1959 that MATCHED that set – complete with a rooster in the center. Of all things, I have LOST that salad bowl. I am just clueless where it went!

  3. Your birthday! So nice you get to spend the evening relaxing with Dad. πŸ™‚

We’re still trying to empty the freezer, too – it just seems like a never-ending project, doesn’t it? Though it’s kind of hard to complain that we have TOO much food. πŸ˜‰

  4. Happy birthday! Have fun! Tasty menu. Fajitas are always good, so I’m sure you can’t go wrong serving it over pasta. πŸ™‚

  5. Is your husband a closet vegan? Lol… The desert sounds super!! I’ve only got chili planned this week. B is never home so why plan? I did make homemade spaghetti sauce yesterday for me, Mom,. B & two of her friends to enjoy. It WAS a treat after too many cans of Hunts! ha!

  6. I’m so glad you get to celebrate your birthday tonight with your dad. I trust you’ll enjoy the day tomorrow. I know exactly how old you’re going to be as I had just turned 20 when you were born.

  7. It is only a few hours to your birthday, so first of all HAPPY BIRTHDAY!!!
So glad that you get to go to your favorite eatery tonight with your DAD!
Tomorrow sounds good, too. Enjoy every minute; be Queen for a day! πŸ™‚

Good for Mike for his bean night. I love that dish, too! Good protein without much fat. Well, it is almost a meatless meal with a bit of stretch of the imagination.

Thanks for taking the time to comment. I enjoy hearing from you.
